- 1 3-oz. pkg. cherry jello
- 1 3-oz. pkg. lime jello
- 1 pkg. Knox gelatin (not a box – a pkg.)
- 1 cup crushed pineapple, in its own juice (for juice only)
- 1/2 cup sugar
- 1 Tbsp. lemon juice
- 1 small can Carnation milk, cold
- 1 8-oz. pkg. cream cheese, room temperature
- 1/4 cup cold water
Italian Chicken Chili

1. In a large skillet, cook sausage in oil over medium heat
- 1/2 lb. loose Italian sausage, hot or sweet
- 1 tsp. olive oil
- 1 lb. boneless, skinless chicken breasts, uncooked and cut into 1” cubes
- 28-oz. can crushed tomatoes, undrained
- 28-oz. can diced tomatoes, undrained
- 15-oz. can white kidney, or cannelloni, beans, rinsed and drained
- 2 celery ribs, chopped
- 1 cup onions, chopped
- 1 small red bell pepper, chopped
- 1/2 cup chicken broth
- 2 Tbsp. chili powder
- 2 tsp. dried oregano
- 2 tsp. minced garlic
- 2 tsp. dried thyme
- 1 medium zucchini, peels on and diced
- 1 cup sliced fresh mushrooms
- 1/4 cup minced fresh parsley
- shredded Italian cheese blend, optional
Fire Station Chili

In a large pot, heat oil over medium-high heat; saute onion and garlic 5 minutes, or until tender
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 2 pounds ground beef
- 1 (28 ounce) can crushed tomatoes
- 1/3 cup chili powder
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon black pepper
- 2 (16-ounce) cans red kidney beans, drained
Creole Shrimp & Sausage

In small saucepan, bring water and broth to boil
- 1/2 cup water
- 1/2 cup chicken broth
- 1 cup quick-cooking bulgur
- 1/2 teaspoon chili powder
- 3/4 teaspoon Creole seasoning, divided
- 1/2 pound smoked sausage, cut into 1/4-inch slices
- 2 teaspoons olive oil, divided
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 2 garlic cloves, minced
- 1 can (16 ounces) kidney beans, rinsed and drained
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1/2 pound uncooked jumbo shrimp, peeled and deveined
- 1/2 teaspoon Worcestershire sauce

Parmesan Garlic and Herb Chicken Tenders

Heat oven to 400°F. Spray large cookie sheet with cooking spray
- 1/2 cup mayonnaise
- 1 tablespoon dried Italian herbs
- 1/2 teaspoon garlic powder
- 1/2 cup plain panko crispy bread crumbs
- 1/2 cup finely shredded Parmesan cheese
- 1 package (14 oz) uncooked chicken tenders (not breaded)
- Tomato pasta sauce, if desired
