Fiesta Chicken Quesadillas

1 Heat oven to 450°F. Line 15x10x1-inch pan with foil
- 4 (8-inch) fat-free flour tortillas
- Cooking spray
- 1 cup chopped cooked chicken
- 1/2 cup thin red bell pepper strips
- 1/4 cup thin green bell pepper strips
- 1/2 cup shredded reduced-fat sharp Cheddar cheese (2 oz)
- 1 tablespoon sliced green onion (1 medium)
- 1/2 cup Thick 'n Chunky salsa
Italian Chicken Pot Pie with Basil Biscuits

In deep 12-inch skillet, heat oil over medium-high heat
- 1 tablespoon olive oil
- 1 medium onion, chopped (1/2 cup)
- 1 clove garlic, finely chopped
- 3 small zucchini, cut into 1/2-inch pieces (about 2 cups)
- 2 cups shredded deli rotisserie chicken (from 2-lb chicken)
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) Progresso® cannellini beans, drained, rinsed
- 1 can (14.5 oz) diced tomatoes with Italian-style herbs, undrained
- 1/4 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 1 cup Original Bisquick® mix
- 2/3 cup yellow cornmeal
- 3/4 cup milk
- 1/4 cup chopped fresh basil
Gluten Free Doughnut Holes

In deep fryer or 2-quart heavy saucepan, heat 2 to 3 inches oil to 375°F
- Vegetable oil for frying
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1 1/4 cups Bisquick® Gluten Free mix
- 1/4 cup packed brown sugar
- 1/4 teaspoon ground nutmeg
- 2 tablespoons butter, melted
- 1/3 cup buttermilk
- 1 egg, beaten
Bacon-Wrapped Burger Roll

1. Preheat the oven to 350˚F/180˚C
- 2 pounds ground beef
- 2 eggs
- 1 cup bread crumbs
- 2 teaspoon salt
- 1 teaspoon pepper
- 2 teaspoons garlic powder
- 4-6 slices ham
- 8-10 slices cheddar cheese
- 2 cups spinach
- 10-12 slices bacon
Caramel Banana Cream Tiramisu

Combine pudding mix and cold milk in a medium bowl and whisk to thicken
- 1 cup Caramel dip or ice cream topping
- 1 (3.4 ounce) package instant banana pudding
- 1 cup cold milk
- 1/2 cup sour cream
- 1 8 oz container whipped topping
- 1 1/2 sleeves of graham crackers
- 2-4 ripe bananas, peeled and sliced { I ended up using 4 small bananas}
- Ground cinnamon, for sprinkling on top
Pizza Zucchini Boats

Preheat oven to 350 degrees F
- 4 zucchini or yellow squash (two of each preferred)
- 3/4 pound hot Italian sausage, casing removed
- 1 (14.5-ounce) can diced tomatoes, drained
- 1/2 cup shredded mozzarella cheese, divided
- 1/4 teaspoon salt

- 1 box yellow cake mix plus the ingredients to make the cake batter listed on the box
- 4 cups rhubarb
- 1 cup sugar
- 1 pint whipping cream
Taco Soup #9

1.Brown the ground beef in a large soup pot over medium-high heat until thoroughly cooked; drain away any fat
- 2 pounds ground beef
- 3 (15-ounce) cans stewed tomatoes
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can navy beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 (16-ounce) bag frozen corn
- 4 celery stalks, chopped
- 2 large onions, finely chopped
- 2 packets taco seasoning
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- 2 (15-ounce) cans beef broth
- Salt and freshly ground black pepper
- Garnishes
- Grated cheddar cheese
- Sour cream
- Tortilla chips, lightly crushed
- Sliced scallions
- Sliced black olives
- 1 .Brown the ground beef in a large soup pot over medium-high heat until thoroughly cooked; drain away any fat.
- 2 .Add the tomatoes, all the beans, the corn, celery, onions, taco seasoning, garlic powder, chili powder, and broth, and simmer for 30 minutes. Season with salt and pepper to taste.
- 3 .Set out the garnishes in bowls, and serve the soup hot.
- Make ahead? Sure. It improves with age.
- For large crowds: Easy to multiply, and not expensive.
- For vegetarians: Leave out the meat. It won’t be authentically taco-like, but still good.

Cookie Monster - DIY Oreos

Using a mixer, combine the flour, cocoa powder, baking soda, baking powder, salt, and sugar
- 1 1/4 cup flour
- 1/2 cup unsweetened Dutch process cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 10 Tablespoons (1 1/4 sticks) unsalted butter, at room temperature
- 1 large egg
Panda Express Honey Walnut Shrimp

Add the water, sugar and walnuts to a small saucepan and bring to a boil
- 1 cup water
- 2/3 cup white sugar
- 1/2 cup walnut halves
- 4 egg whites
- 2/3 cup cornstarch
- 1/4 cup mayonnaise
- 1 pound large shrimp, 18-20 count, peeled and deveined
- 2 tablespoons honey
- 1 tablespoon sweetened condensed milk
- 1 cup vegetable oil for frying
