Puerto Rican Rice and Chicken

1. Put all the ingredients except the rice into a 6-quart pot and bring to a boil
- 3 pounds chicken legs, skinned and cut up
- 1 large Spanish onion, chopped
- 2 cloves garlic, minced
- 1 green pepper, seeded and diced
- 1 1/2 pounds ripe tomatoes, peeled and chopped, with juice
- 1 Spanish sausage (chorizo), chopped, or 1/2 cup chopped ham (optional)
- 1 bay leaf
- 1 quart water
- 1 teaspoon oregano
- 1/4 teaspoon ground cumin
- 1 teaspoon salt, or to taste
- Black pepper to taste
- 1 cup short-grain rice
Chicken Thighs Cacciatore

Season chicken with salt and pepper
- 8 chicken thighs, skinned, if desired
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, divided
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1/2 cup dry red wine or beef broth
- 2 (14-1/2-ounce) cans Italian-style diced tomatoes, undrained
Cavatelli & Broccoli

Cook cavatelli according to package directions
- 3 or 4 gloves chopped garlic (I buy the already minced in a jar…so much easier)
- 3 tbsp olive oil
- 1 1/2 cups chicken broth
- 1 pkg frozen chopped broccoli
- 1 pkg frozen Cavetelli pasta
- 2 bay leaves
- pepper to taste
Creamy Key Lime Chicken Enchiladas

Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray
- 1 medium onion, chopped (1/2 cup)
- 1 can (4.5 oz) chopped green chiles
- 2 1/2 cups shredded deli rotisserie chicken
- 1 container (6 oz) Key lime yogurt
- 1/2 cup chopped fresh cilantro
- Juice of 1 medium lime
- 1 can (10 oz) enchilada sauce (hot or medium)
- 12 corn tortillas
- 1/2 cup shredded reduced-fat Mexican cheese blend (2 oz)
Chocolate-Peanut Butter Cookie Pizza

1 Heat oven to 350°. In ungreased 12-inch pizza pan, break up cookie dough
- 1 roll (16.5 oz) refrigerated chocolate chip cookies
- 1 package (8 oz) cream cheese, softened
- 1/2 cup creamy peanut butter
- 1 cup powdered sugar
- 1/4 cup milk
- 1 cup frozen whipped topping, thawed
- 3/4 cup hot fudge topping
- 1/4 cup chopped peanuts
Mini Hot Turkey Sandwiches

Preheat oven to 350 degrees
- 3 (8-ounce) packages small party rolls on aluminum trays
- 1 (3-ounce) package cream cheese, softened
- 1/2 cup mayonnaise
- 1/2 teaspoon curry powder
- 1/8 teaspoon ground red pepper
- 2 tablespoons chutney
- 3/4 pound very thinly sliced smoked turkey
- 1 (16-ounce) can whole-berry cranberry sauce
- 1/4 cup minced onion
Root Beer Soda Pop Cupcakes
