Lemon Cake With a Blueberry Crown

Measure out 2 tablespoons cake mix and place it in a small mixing bowl
- Cake:
- 1 package plain yellow or vanilla cake mix
- 1 1/2 cups fresh blueberries
- 1 package small serving size lemon gelatin
- 2/3 cup hot water
- 2/3 cup vegetable oil
- 4 large eggs
- Glaze:
- 1/4 cup fresh lemon juice (2 medium size lemons)
- 1 teaspoon lemon zest
- 1 cup confectioners sugar, sifted
Cajun Chicken Pizza

In a stand mixer, add dry dough ingredients
- Dough Ingredients:
- 1 C hot water
- 1 pkg active dry yeast (2 1/4 tsp)
- 1/4 tsp sugar
- 2 1/2-3 C all purpose flour
- 1/8 tsp salt
- Olive oil
- Pizza Ingredients:
- 1 : 4-5 oz chicken breast
- 1 Tbsp Cajun seasoning, divided
- 2 Tbsp unsalted butter
- 1/2 C onion, sliced
- 1/2 C green pepper, sliced
- 3/4 C mushrooms, sliced
- Pizza sauce
- 1 1/2 C shredded mozzarella, divided
Strawberry Pie Pockets

Heat oven to 400°F. Line 2 cookie sheets with cooking parchment paper
- 1 box refrigerated pie crusts, softened as directed on box
- 1/3 cup strawberry jam or preserves
- 1 egg
- 1 tablespoon water
- 2 tablespoons sugar
Cheese-Baked Halibut *(GOOD)*

Arrange halibut steaks in greased 2-quart glass dish with thick edges toward outside
- 2 pound halibut steaks
- 1 tablespoon tarragon vinegar
- Salt and pepper to taste
- 1/4 teaspoon basil
- 1/3 cup finely dry bread crumbs
- 1 cup grated Cheddar cheese
- 1/4 cup melted butter
Barbecued Chicken Nachos

1 Heat coals or gas grill for direct heat
- 16 cups corn tortilla chips
- 3 cups cut-up cooked chicken
- 1 1/3 cups barbecue sauce
- 2 cans (15 ounces each) chili beans in sauce, undrained
- 2 cans (2 1/4 ounces each) sliced ripe olives, drained
- 2 large tomatoes, chopped (2 cups)
- 6 cups shredded Colby-Monterey Jack cheese (24 ounces)
Cola Pot Roast *(GOOD)*

Sprinkle salt, pepper, and garlic powder evenly over entire roast then place roast in 6-quart slow cooker
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 (3-1/2- to 4-1/2-pound) boneless beef chuck roast
- 4 carrots, peeled and sliced
- 1 large onion, cut into half-moons
- 1 (12-ounce) can cola
- 1 (12-ounce) bottle chili sauce
- 2 tablespoons Worcestershire sauce
- 2 tablespoons hot pepper sauce
Homemade Prego Spaghetti Sauce

Heat oil over medium low heat
- 4 T. olive oil
- 2 large minced garlic cloves
- 1 onion, very finely chopped
- 2 tsp. dried basil
- 2 tsp. dried parsley
- 1 tsp. ground black pepper
- 1 tsp. dried oregano
- 2 tsp. salt
- 7 cups chopped fresh from the garden tomatoes (or 56 oz. canned crushed toms)
- 1 (28 oz.) can tomato paste
- 1 (28 oz.) can tomato sauce
- 1/4 cup granulated sugar
CHICKEN CHOW MEIN

Put chicken broth into blender with cornstarch and tea
- 1 (14 oz) can clear chicken broth
- 3 level TB cornstarch
- 1/3 cup lightly brewed tea—preferably cooled down to lukewarm
- 6 1/2 OZ can boned chicken in broth or about l 1/2 cups well-diced, leftover, baked white chicken meat, minus bones and skin
- 1 TB dry minced onion
- 1 (4 oz) can well drained mushrooms
- 1 small can drained sliced water chestnuts Or use about 2/3 cup of cooked celery
- Canned Chow Mein or Rice Noodles
Terry's Cilantro Cream Chicken

Brown chicken in butter, seasoning chicken while browning
- 4 boneless chicken breasts
- 1 package cream cheese - (3 oz)
- 3/4 cup heavy whipping cream
- Juice of 1 lime - (1 tbspn)
- McCormick's Rotisserie seasoning to taste (or other no-sugar brand)
- Salt to taste
- Freshly-ground black pepper to taste
- 3 tablespoons butter
- 1/2 cup chopped fresh cilantro
BISCUIT MIX MUFFIN CUPCAKES
