Cranberry Upside- Down Muffins

- 3/4 cup whole-berry cranberry sauce
- 1/4 cup packed brown sugar
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup skim milk
- 1/4 cup vegetable oil
- 1 teaspoon grated orange peel
- 2 egg whites
Real Chinese All-Purpose Stir-Fry Sauce

Combine ingredients in a jar and shake to combine
- 1/4 cup light soy sauce
- 1/4 cup all-purpose soy sauce
- 1/2 cup oyster sauce
- 1/4 cup Chinese wine (or dry sherry)
- 1/4 cup cornstarch
- 1 tablespoon sugar
- 2 tablespoons sesame oil
- 1 to 2 teaspoons ground white pepper
Skewered Tortellini

Cook tortellini according to package directions; drain, rinse with cold water, and drain again
- 1 (16-ounce) bag frozen cheese tortellini
- 40 (6-inch) wooden or metal skewers
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup grated Parmesan cheese
- 2 teaspoons black pepper
- 2 tablespoons milk
Caribbean Chicken

In a large casserole, sauté chicken in 2 tablespoon butter
- 3-4 pounds chicken, cut into pieces
- 2 tablespoon butter
- 2 1/2 cups milk
- 1 large onion, sliced
- 3-4 tablespoon all-purpose flour
- 3-4 tablespoon butter
- 1 large ripe mango, peeled and sliced or 1 cup sliced fresh or canned peaches
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon ginger
- 3 tablespoon dark rum (optional)
Crock Pot Cajun Chili

Turn crock pot on to medium heat so it can get hot
- 1 lb of ground beef
- 1 lb ground pork
- 1 bell pepper (diced)
- 1 sweet onion (diced)
- 1 tablespoon minced garlic
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 cans of Rotel tomatoes
- 1 can of crushed tomatoes
- 1 can of pinto beans
- 1 can of black beans
- 1 can of dark red kidney beans
- 1 can of sweet whole kernel corn
- 2 teaspoons Slap Ya Mama Cajun Seasoning
- Dash of Louisiana Hot Sauce
- 2 cups shredded cheese
- Chopped green onions (for garnish)
Beef and Chorizo Burgers with Roasted Chile Mayonnaise

1 Heat gas or charcoal grill
- 1/4 cup mayonnaise or salad dressing
- 1 clove garlic, finely chopped
- 2 teaspoons lime juice
- 1 tablespoon chopped fresh cilantro
- 1 small poblano chile
- 1 lb lean (at least 80%) ground beef
- 1/2 lb bulk chorizo sausage or Italian pork sausage, crumbled
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 slices (1 oz each) Monterey Jack cheese
- 4 hamburger buns, split
- 1 medium tomato, coarsely chopped
Sweet Corn with Sage

- 3 tablespoons butter or margarine
- 1 medium onion, finely chopped (1/2 cup)
- 2 bags (12 oz each) frozen corn
- 1/4 cup half-and-half
- 2 tablespoons chopped fresh sage leaves
- 3/4 teaspoon salt
- 1/4 teaspoon coarse ground black pepper
Shrimp Scampi with Zucchini Noodles

Zucchini noodles, aka zoodles, have been making their way around the food sphere for a while now and I finally jump...
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 pound (16-24) shrimp, shelled and deveined
- 4 cloves garlic, chopped
- 1 pinch red pepper flakes (optional)
- 1/4 cup white wine or chicken broth or shrimp broth
- 2 tablespoons lemon juice (~1 lemon)
- 3 medium zucchini, cut into noodles
- salt and pepper to taste
- 1 teaspoon lemon zest
- 1 tablespoon parsley, chopped
Layered Lemon Grape Bites

- 1-1/2 cups boiling water, divided
- 3 pkg. (3 oz. each) JELL-O Lemon Flavor Gelatin, divided
- 2/3 cup seedless red grapes, quartered
- 2/3 cup seedless green grapes, quartered
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

1. In a large skillet, add the green beans, 3/4 cup water, and 1/8 teaspoon salt and place over medium high heat
- 1 pound green beans, trimmed
- 3/8 teaspoon salt, divided
- 1 1/2 tablespoons butter
- 1 1/2 teaspoons granulated sugar
- 1 1/2 teaspoons minced garlic (1 large clove)
- 1 1/2 cups cherry tomatoes, sliced in half
- 2 tablespoons fresh basil, stemmed and chopped
- 1 rounded tablespoon real bacon bits
- Black pepper to taste
