Caramel Corn

Place the popped popcorn into a big bowl, one that is at least twice the volume of the popcorn itself
- 12 cups popped popcorn (about 1/2 cup kernels or about two bags of microwave popcorn)
- 1 cup light brown sugar
- 1/4 cup light corn syrup (like Karo)
- 1/2 teaspoon sea salt (omit if you are using salted microwave popcorn)
- 1/2 cup butter
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
Pumpkin Spice Cake with Cream Cheese Frosting

Preheat over to 350 degrees F
- Cream Cheese Frosting:
- 1 (15-ounce) can pumpkin pureed
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- 1 (18-ounce) package yellow cake mix with pudding
- 1/4 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup butter softened
- 4 (3-ounce) packages cream cheese softened
- 2 cups confectioners' sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Heat n Sweet Chili

Brown the ground beef, drain and return to a large saucepan or Dutch oven
- 2 lb. ground beef or chuck ($3.98)
- 3 cans of beans – red kidney and/or black beans ($2.01)
- 2 cans diced tomatoes ($.32)
- 1 can Rotel diced tomatoes and green chilies ($.16)
- 1 small red onion, chopped ($.40)
- 4 garlic cloves, crushed ($.20)
- 1/4 cup maple syrup
- 3 About 3 Tbsp chili powder (more or less, to taste) ($.15)
- Salt and pepper to taste
- Optional – top with sour cream, shredded cheese, sliced green onions ($.50-$1)
- Veggie Side Dish – steamed broccoli ($.79)
Southwestern Black Bean Dip

In a medium saucepan, heat oil over medium heat
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 2 (16 ounce) cans black beans, rinsed
- 1 3/4 cups beef broth
- 2 tablespoons chili powder
- 1 garlic clove, minced
- 1/4 teaspoon dried oregano
- 1/8 teaspoon ground cumin
- 1/2 cup (2 ounces) shredded Monterey Jack cheese
Chick Peas with Sausage and Rice

1 Heat oil in medium saucepan over medium-high heat
- 2 tbsp. Extra Virgin Olive Oil
- 1 chorizo from 1 pkg. (3.5 oz.) Chorizo, sliced
- 1/2 onion, finely chopped (about 3/4 cup)
- 1/2 green bell pepper, finely chopped (about 1/2 cup)
- 2 tbsp. Minced Garlic
- 1 packet Sazón with Cilantro and Annatto
- 1 packet GOYA® Chicken Bouillon, mixed with 2 cups water
- 1 cup Extra Long Grain Rice
- 1 can (15.5 oz.) Chickpeas, drained and rinsed
Pineapple Beef Stir-Fry

In small bowl, combine first five ingredients
- 1/2 cup unsweetened pineapple juice
- 2 tablespoons white wine or reduced-sodium chicken broth
- 1 tablespoon packed brown sugar
- 1 tablespoon reduced-sodium soy sauce
- 1/8 teaspoon cayenne pepper
- 1/2 pound beef top sirloin steak, cut into thin strips
- 1 tablespoon cornstarch
- 3/4 teaspoon olive oil, divided
- 1 large carrot, sliced
- 1/2 small onion, halved and sliced
- 1 small green pepper, julienned
- 1/4 cup fresh snow peas
- 1/3 cup unsweetened pineapple tidbits
- 1 cup cooked brown rice
Spiced Mac and Cheese

1. Heat oven to 350°F. 2
- Topping:
- 4 tbsp. butter (1/2 stick)
- 1 tsp. Extra Virgin Olive Oil
- 1/4 cup flour
- 1 tbsp. Sazonador Total
- 2 tbsp. Hot Yellow Pepper Paste–Ají Amarillo
- 3 cups whole milk
- 2 cups shredded cheddar cheese
- 1 pkg. (7 oz.) Small Elbow Pasta, cooked according to package directions and drained
- 3 tbsp. Extra Virgin Olive Oil
- 1 cup Breadcrumbs made with Sazonador Total
Grilled Shrimp and Scallop Kabobs

1 Heat coals or gas grill for direct heat
- 1/4 cup lemon juice
- 1/4 cup vegetable oil
- 1 tablespoon chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 pound sea scallops
- 12 uncooked large shrimp in shells
- 8 medium whole fresh mushrooms, (about 6 ounces)
- 8 cherry tomatoes
- 1 medium zucchini, (about 1 inch in diameter), cut into 1-inch slices
Beefed Up Short Ribs

Preheat oven to 475 degrees
- 4 pounds lean beef short ribs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 (8-ounce) can tomato sauce
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped onion
- 2 tablespoons brown sugar
- 1 clove garlic, minced
- 1/8 teaspoon ground red pepper
- 3 tablespoons Worcestershire sauce
- 2 tablespoons lemon juice
- 2 tablespoons prepared mustard

1 Make cupcake batter as directed on cupcake mix box, using water, oil, eggs and adding 1/2 box of pudding mix
- Cupcakes:
- Betty Crocker® FUN da-Middles™ yellow cupcake mix with creamy vanilla filling
- 3/4 cup water
- 1/3 cup vegetable oil
- 2 eggs
- 1/2 box (3.4-oz size) banana cream instant pudding and pie filling mix
- 12 vanilla wafer cookies
- Frosting:
- 1 cup butter, softened
- 4 cups powdered sugar
- 1/2 box (3.4-oz size) banana cream instant pudding and pie filling mix
- 3 tablespoons whipping cream
- 1 tablespoon vanilla
- 2 teaspoons banana extract
- Garnish:
- 1/4 cup graham cracker crumbs
- 12 vanilla wafer cookies
