- 3 long strips orange peel
- 4-1/2 pounds sweet potatoes, peeled and cut into

- 3/4 cup packed brown sugar

- 1 cup orange juice
- 1-1/2 tablespoons butter
Chocolate Pudding Sandwiches

In a large bowl, whisk milk and pudding mix for 2 minutes; let stand for 2 minutes or until slightly thickened
- 1-1/2 cups cold fat-free milk
- 1 package (1.4 ounces) sugar-free instant chocolate pudding mix
- 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
- 1 cup miniature marshmallows

In large bowl, cream butter and confectioners' sugar until light and fluffy
- 1 cup butter, softened
- 1/2 cup confectioners' sugar
- 1 egg
- 1-1/2 cups all-purpose flour
- 1/2 cup flaked coconut
- 1/8 teaspoon salt
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 3 tablespoons cornstarch
- 1 package (12 ounces) fresh or frozen cranberries
- 1 cup unsweetened apple juice
- 1 cup chopped Diamond of California® Walnuts
- 2 ounces white baking chocolate, melted
Banana Sundae Wrap

Heat oven to 400 degrees. Cut each pastry sheet in half
- 1 package (17 1/4 ounce) frozen puff pastry, thawed
- 1/4 cup miniature semisweet chocolate chips
- 2 ripe bananas, peeled and cut crosswise in half
- 1/2 cup caramel topping
- 1-2 tbsp rum, if desired
- whipped cream, if desired
- 1/4 cup chopped pecans

- 3 Tbsp Cornstarch
- 1 1/2 cups Coconut Milk, canned – not lite
- 3 Egg Yolks – Well Beaten
- 1 tsp Vanilla Extract
- 1 cup Coconut Cream*
- 1 Tbsp Sugar

- 1 Large, firm, ripe banana – sliced

- (I used Duncan Hines Dark Chocolate Fudge)

- 1/4 cup water
- 2 eggs
- 1/4 teaspoon peppermint extract
- Peppermint Buttercream Frosting
- 1/3 cup butter, softened
- 1 1/2 cups powdered sugar
- 1 tablespoon milk
- 1/4 teaspoon peppermint extract
- 1/4 teaspoon vanilla extract
- Green food coloring
- Chocolate Frosting
- 1/3 cup whole milk
- 1/4 cup butter
- 1 (12 ounce) bag semi-sweet chocolate chips
- 1 teaspoon vanilla
- 1 cup powdered sugar
Carrot Cake #5

9 x 13 greased pan. Bake 40-45 minutes at 350 degrees
- Beat together:
- 1 3/4 cup sugar
- 1 1/2 cups oil
- 4 eggs
- Stir in:
- 2 cups flour
- 2 t. baking powder
- 2 t. baking soda
- 2 t. cinnamon
- 1 t. salt
- 1 t. vanilla
- Fold in:
- 3 cups grated carrots
- 1 cup ground pecans
- Icing:
- 1 pkg. cream cheese
- 1- 1 lb. box powdered sugar
- 1 stick margarine
- 2 t. vanilla
- 1 can crushed pineapple, drained
