Chipotle Chicken Chilaquiles

1 Combine salsa and broth in medium bowl; set aside
- 3 cups prepared chipotle salsa
- 1 1⁄2 cups chicken broth
- 12 (6 or 7-inch) corn tortillas
- 1 to 11 ⁄4 cups vegetable oil for frying
- 2 cups shredded cooked chicken
- 6 eggs, beaten
- 1 cup shredded Chihuahua or Manchego cheese
- 1 ⁄2 cup finely crumbled queso añejo or feta cheese
- 1 ⁄3 cup crema mexicana or crème fraîche

- 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda

Easy Broccoli, Cheese and Ham Muffins

Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray
- 1 bag (12 oz) Green Giant® Valley Fresh Steamers® frozen broccoli & cheese sauce
- 1 1/2 cups Original Bisquick® mix
- 1/2 cup milk
- 3 tablespoons vegetable oil
- 1 egg
- 1/2 cup diced cooked ham
- 1/2 cup shredded sharp Cheddar cheese (2 oz)
Philly Cheese Steaks

Preheat oven to 350°. Coat a large nonstick skillet with cooking spray; set pan over medium-high heat
- 1 spray(s) olive oil cooking spray
- 1 medium onion(s), thinly sliced
- 1 pound(s) raw lean flank steak, cut into 8 thin slices
- 2 tsp Worcestershire sauce
- 1/4 tsp table salt
- 1/4 tsp black pepper
- 4 roll(s) reduced-calorie hot dog bun(s)

Bacon Walnut Spinach

Cook bacon in a large skillet until crisp; remove bacon, reserving 1 tablespoon drippings in skillet
- 4 slices bacon
- 2 1/2 tablespoons white wine vinegar
- 1 (10-ounce) package fresh spinach
- 2 tablespoons chopped walnuts
- 1/4 teaspoon pepper
- Pinch of sugar (optional)
Healthy Baked Chicken Nuggets

Preheat oven to 425°. Spray a baking sheet with olive oil spray
- 16 oz (2 large) skinless boneless chicken breasts, cut into even bit sized pieces
- salt and pepper to taste
- 2 tsp olive oil
- 6 tbsp whole wheat Italian seasoned breadcrumbs
- 2 tbsp panko
- 2 tbsp grated Parmesan cheese
- olive oil spray (I used my Misto)
QUICK COOKER SALSA CHICKEN LETTUCE WRAPS

Season the chicken breasts with the Southwestern Seasoning Mix and place them in the Quick Cooker
- Filling:
- 2 lbs. (1 kg) boneless, skinless chicken breasts
- 2 tbsp (30 mL) Southwestern Seasoning Mix
- 1 small onion
- 1 jalapeño (optional)
- 2 garlic cloves
- 1 cup (250 mL) chunky salsa
- Wraps:
- 2 heads butter lettuce or 16 tortilla shells
- Optional toppings: radishes, cheddar cheese, Greek yogurt or sour cream, cilantro, avocado

- 1/2 teaspoon salt
- 3 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 sweet red pepper, cored and diced
- 3 tablespoons apple cider vinegar
- 1 teaspoon caraway seeds
- 1 14 1/2 ounce can diced tomatoes
- 1 cup beef broth
- 2 tablespoons tomato paste
- Chopped fresh parsley
- Cooked egg noodles (optional)
