Coconut Pecan Parfait

In large bowl, combine toasted coconut and pudding; mix well
- 1 cup flaked coconut, toasted (see Note)
- 1 (6-serving) package instant vanilla pudding and pie filling, prepared according to package directions
- 1 cup pecan pieces, toasted (see Note)
Baked Chicken Mexican Style

In a shallow pan beat together egg, salsa and salt
- 1 egg
- 2 Tablespoons bottled green chili salsa or taco sauce
- 1/4 teaspoon salt
- 2 cups plain Panko bread crumbs
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 1/2 teaspoons garlic salt
- 1/2 teaspoon ground oregano
- 6 boneless, skinless chicken breasts
- 1/4 cup butter
- 4-6 cups shredded iceberg lettuce
- 1 cup sour cream
- 6 Tablespoons thinly sliced green onion
- 1 1/2 dozen cherry tomatoes
- 1 - 2 limes cut into wedges
- 1 ripe avocado, peeled, pitted and sliced
Homemade Microwave Popcorn

Toss the popcorn with the olive oil, salt, and any seasonings you may want, in the paper bag
- 1/4 cup good quality popcorn
- 2 teaspoons olive oil, vegetable oil or melted butter (optional)
- 1/4 teaspoon kosher salt or popcorn salt (optional)
- Brown paper lunch bag

In an electric mixer, place butter and sugar and beat until light and fluffy
- 1/2 CUP BUTTER
- 1/2 CUP GRANULATED SUGAR
- 1 EGG YOLK
- 1/2 TEASPOON ALMOST EXTRACT
- 2 CUPS ALL PURPOSE FLOUR
Mexican Skillet Rice

In large skillet coated with cooking spray, cook and stir egg over medium-high heat until set
- 1 egg, beaten
- 1 pound chicken tenderloins, chopped
- 1 small onion, chopped
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 2 cups cooked jasmine or long grain rice
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (11 ounces) Mexicorn, drained
- 1 jar (7 ounces) roasted sweet red peppers, drained and sliced
- 1 jar (8 ounces) taco sauce
- 2 green onions, chopped
- 1/4 cup minced fresh cilantro
Bacon & Chili Cheese Dip Mix

Mix all ingredients and stir well
- 1 T plus 3/4 tsp minced onion
- 2-1/2 tsp bacon bits (You can use real or imitation. I usually use the imitation because I often make these weeks before I use them and I am fearful that the real bacon won’t stay fresh)
- 1-1/4 tsp garlic powder
- 2-1/2 tsp Cheddar cheese powder (Again, I can get this at my larger local grocery store but if yours does not carry it, you can get it from Amazon here.)
- 1-1/4 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1/4 tsp salt

- 1/4 cup milk
