Mini Onion Burgers

Preheat a flat-top grill pan over high heat
- 1 red onion, sliced
- 1 lb. lean ground beef
- 1/4 t. salt
- 1/8 t. pepper
- 12 to 15 small potato rolls, split
- Optional: mustard, catsup, mayonnaise
Red Eye Brisket

Heat a large Dutch oven over medium-high heat; add a tablespoon of oil
- For the Instant Pickled Onions:
- 1 4- to 5-pound flat beef brisket, point split and trimmed, at room temp
- Kosher salt and coarse black pepper
- 3 to 4 tablespoons vegetable or olive oil
- 3 ancho chilies, stemmed and seeded
- 3 cups beef stock
- 1 large or 2 medium onions, chopped
- 4 cloves garlic, chopped
- 1 tablespoon coriander, a palmful
- 1 tablespoon ground cumin, a palmful
- 1 tablespoon ground paprika or smoked paprika
- 1 teaspoon allspice, 1/3 palmful
- 3 tablespoons tomato paste
- 1 cup dry red wine
- 2 cups strong brewed coffee
- 2 tablespoons honey
- 1 15-ounce can diced or stewed tomatoes
- Juice of 3 limes
- 1 tablespoon honey or 1 1/2 teaspoons superfine sugar
- 1 teaspoon Kosher salt
- 1 teaspoon ground coriander
- Black pepper, to taste
- 2 red onions, thinly sliced
- Warm onion or brioche rolls, or charred tortillas
- Cress, cilantro or parsley, for garnish
Chocolate Chip Cookies With Espresso Kick

1. Line a baking sheet with parchment paper
- 3 2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons instant espresso powder, or to taste
- 1 1/4 cups unsalted butter, at room temperature
- 1 1/3 cups tightly packed brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/4 pounds chocolate chunks
- Sea salt for sprinkling
Blender Mocha Mousse

In a small saucepan over medium heat, bring milk just to a boil
- 3/4 cup milk
- 1 1/2 cups semisweet chocolate chips
- 1/3 cup sugar
- 1 teaspoon instant coffee powder
- 1 1/2 cups heavy cream
Hearty Sausage 'n' Hash Browns

In a large skillet, cook potatoes and pepper in oil over medium heat until potatoes are golden brown
- 4 cups frozen cubed hash brown potatoes
- 1/4 cup chopped green pepper
- 1/3 cup canola oil
- 1/4 pound smoked sausage, halved lengthwise and cut into 1/4-inch slices
- 3 slices process American cheese
Pineapple Coconut Cake

Preheat oven to 350 degrees
- 1 (3.4 ounce) package French vanilla instant pudding mix
- 1 (18.25 ounce) package white cake mix
- 1 (20 ounce) can crushed pineapple, well drained
- 1 cup sweetened flaked coconut
- 1 cup chopped pecans or macadamia nuts, toasted
- 1 (8 ounce) container frozen whipped topping, thawed
Southwestern Black Bean and Ham Soup

1. Place the ham hock, onion, and water in the crockpot
- 1 large meaty ham hock
- 1 large onion, diced
- 1 cup water
- 2 (15-ounce) cans diced tomatoes
- 3/4 teaspoon ground cumin
- 1 (4-ounce) can peeled, chopped, mild green chilies
- 4 (15-ounce) cans of black beans, drained
- fresh cilantro
- salt to taste
Linguine & Clams

Cook pasta according to package directions, just until tender; drain
- 16-oz. pkg. linguine pasta, uncooked
- 1/4 c. butter
- 1/4 c. olive oil
- 4 cloves garlic, minced
- 1 c. white wine or clam broth
- 10-oz. can whole baby clams, drained and liquid reserved
- 2 T. fresh parsley, minced
- Garnish: cracked pepper

- Cupcakes:
- 2 cups Gold Medal® all-purpose flour
- 1 1/4 teaspoons baking soda
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup hot water
- 2/3 cup unsweetened baking cocoa
- 3/4 cup shortening
- 1 1/2 cups granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 tablespoons grated orange peel
- Chocolate-Orange Frosting:
- 1/2 cup butter or margarine, softened
- 3 oz unsweetened baking chocolate, melted, cooled
- 3 cups powdered sugar
- 2 teaspoons vanilla
- 2 to 3 tablespoons orange juice
- Garnish:
- 6 orange slice candies (wedges)
