Chipotle Stroganoff

Freeze the beef for 10 minutes
- 1 pound beef filet or petite filet
- 3 tablespoons vegetable oil, divided
- 1/2 pound cremini mushrooms, thinly sliced
- 1 onion, thinly sliced
- 2 large cloves garlic, chopped
- Salt and pepper
- 1 tablespoon chopped fresh thyme
- 1 cup beef stock
- 2 to 3 tablespoons puréed chipotle chiles in adobo sauce (puréed in a food processor or blender)
- 1/3 cup mexican crema, sour cream or creme fraîche
- 3/4 pound dried egg noodles
- 2 tablespoons butter
- Chopped chives and cilantro, for garnish
Slow Cooked Pork Stew

In 3-1/2-quart (or larger) slow cooker, combine potatoes, carrots, onions, bouillon cube, salt, and pepper
- 3 medium-sized potatoes, peeled and cut into 1-inch chunks
- 3 carrots, peeled and cut into 1-inch chunks
- 1 medium-sized onion, cut into wedges
- 1 beef bouillon cube
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pounds boneless pork roast or butt, cut into 1-1/2-inch chunks
- 1 (24-ounce) jar applesauce
- 2 teaspoons browning and seasoning sauce
Healthified Quick Cinnamon Rolls

1 Preheat oven to 375°F. Grease an 8- or 9-inch round baking pan; set aside
- 1 package (8 oz) refrigerated crescent rolls

Megan’s Crazy Spicy Chili

In a large soup pot over medium-high heat, brown beef and onion; drain and set aside in a bowl
- 1 lb. ground beef1 onion, chopped
- 1/2 lb. spicy ground pork sausage
- 1/2 lb. andouille pork link sausage, sliced
- 2 (15-oz.) cans red kidney beans
- 2 (14-oz.) cans diced tomatoes
- 2 (8-oz.) cans tomato sauce
- 1 c. corn
- 1-1/2 c. water
- 1-1/4 oz. pkg. chili seasoning mix
- Garnish: sour cream, shredded Cheddar cheese, corn chips
Garlic Tortellini
