- 1/4 c. butter, softened
- 9-oz. pkg. yellow cake mix
- Garnish: vanilla ice cream

Mom's Chilly-Day Cheese Soup

- 8 potatoes, peeled and diced
- 1 onion, chopped
- 2 quarts water
- 2 16-oz. pkgs. frozen broccoli, cauliflower and carrot blend
- 1 10-3/4 oz. can cream of celery soup
- 1 10-3/4 oz. can cream of chicken soup
- 1 16-oz. pkg. pasteurized process cheese spread, cubed

Make the shortcake topping
- For the topping:
- 2 cups cake flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, chilled and cut into small chunks
- 3/4 cup heavy cream
- For the filling:
- 2 pounds fresh cherries, pitted
- 1/4 cup honey, mild flavored such as clover or orange blossom
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 2 tablespoons lemon juice
- 2 tablespoons Kirsch (I used my DIY strawberry vodka)
- 1 tablespoon unsalted butter, softened
- 2 tablespoons unsalted butter, chilled and cut into small pieces, plus butter for the pan
- 2 tablespoons heavy cream
- 2 tablespoons sugar
- Powdered sugar for dusting
- Good-quality vanilla ice cream for serving (optional)
Chili Chicken Soup with Cilantro Dumplings

In 3-quart saucepan, heat oil over medium heat
- 1 tablespoon vegetable oil
- 1 1/4 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 1 medium onion, chopped (1/2 cup)
- 3 teaspoons chili powder
- 1/2 to 1 teaspoon salt
- 5 cups Progresso® chicken broth (from two 32-oz cartons)
- 2 cups Original Bisquick® mix
- 2/3 cup milk
- 1/2 cup chopped fresh cilantro
- 1/2 teaspoon ground cumin
- 1 jalapeño chile, seeded, chopped, if desired

- 2 cups sugar
- 1/3 cup lemon juice

- TOPPING:
- 2 cups (16 ounces) sour cream
