Eggnog Cupcakes with Whipped Eggnog Buttercream

1 Heat oven to 350°F. Line 12 regular-size muffin cups with paper baking cups
- Cupcakes:
- 1 1/4 cups all-purpose flour
- 1 cup sugar
- 1/2 teaspoon freshly grated nutmeg
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- Scant 1/4 teaspoon salt
- 1/2 cup butter, softened
- 2 eggs
- 1/2 cup eggnog
- Frosting:
- 1 cup sugar
- 1/4 cup all-purpose flour
- 1 cup eggnog
- 1/4 teaspoon freshly grated nutmeg
- 1 cup butter, softened
- Dash salt
- Garnish, if desired:
- decorating Decors candy sprinkles
Santa's Potato Soup

In a soup pot, brown onion in butter
- 1/2 cup diced onion
- 1/4 cup (1/2 stick) butter
- 4 cups large-diced potatoes (about 2 to 2-1/2 pounds)
- 2 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups milk
- 1/4 cup potato flakes
- 1 scallion, thinly sliced
- 1 tablespoon chopped roasted red peppers
Spicy Chili

Place 2 cups of water in a 6 quart saucepan and bring to a boil

- 1 can (15 oz.) Hot Chili Beans
- 1 pkg Chili Seasoning
- 1 medium onion chopped

- 7-1/4 oz. pkg. macaroni & cheese mix
- 2 eggs, beaten
- 16-oz. jar pizza sauce
- 4-oz. pkg. sliced pepperoni
- 1 c. shredded mozzarella cheese
Doritos Taco Bake

Preheat oven to 350. Brown the ground beef and mix in the taco seasoning according to package directions
- 1 pound ground beef or turkey
- 1 package taco seasoning (I use low sodium)
- 3/4 cup milk
- 2 cups cheese, divided
- 1 cup sour cream
- 1 cup salsa (medium or mild depending on preference)
- 1 can of cream of mushroom or chicken soup (homemade or store-bought)
- 1 bag of Doritos, any flavor
