Beef Casserole

Cook noodles as directed on package
- 8 ounces noodles
- 1 tablespoon butter
- 1 pound ground chuck
- 2 8 ounce cans tomato sauce
- 1/2 pound cottage cheese
- 2 tablespoons melted butter
- 1 8 ounce pkg. soft cream cheese
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- 1 tablespoon minced green pepper
Cheesy Grilled Potatoes

Heat your gas grill or light the coals, if using charcoal
- 6 medium potatoes, cut into 1-inch chunks (Yukon Gold are particularly good!)
- 1/2 tsp. salt
- 2 tbsp. butter, cut into small dice
- 1 cup cheddar cheese, shredded
- 2 tbsp. crumbled cooked bacon
- 2 medium green onions, sliced
Roxie's Delicious Chicken Breasts

Mix all ingredients together and pour over the chicken breasts
- 6 chicken breasts, boneless, skinless type
- 8 oz. cream cheese
- 1 pound mushrooms
- 2 (10 oz. size) condensed cream of chicken soup
- 1 pkg. Good Seasons Italian dry salad dressing mix
Sweet and Tangy Chicken

Mix all ingredients, except chicken, in a bowl
- 8 chicken thighs - You can use a whole chicken or other parts. We love thighs the best. And we wantthem on the bone with the skin.
- 1 package dry french onion soup mix
- 1 (8 oz bottle) Russian dressing (I prefer Wishbone Russian dressing)
- 1 small jar of apricot preserves or about a cupful
Chicken Country Captain

Preheat oven to 350 degrees
- 2 whole boneless chicken breasts
- 1/2 cup flour seasoned with salt, pepper, and paprika
- 1 onion about the size of a teacup, diced
- 1 green pepper, diced
- 1 clove garlic, minced
- 1 tablespoon curry powder
- 1/2 teaspoon dried thyme
- 2 cups stewed tomatoes
- Butter or oil
- 3 tablespoons currants or raisins
- Toasted slivered almonds for garnish
Cheesy Skillet Beans

In a large skillet, saute onion in butter for about 5 minutes
- 1 onion, thinly sliced
- 2 tablespoons butter
- 1 (16-ounce) can pork and beans or vegetarian beans
- 1 (15-ounce) can garbanzo beans, drained
- 2 (9- or 10-ounce) packages frozen green beans, thawed
- 3/4 cup bottled barbecue sauce
- 1 cup (4 ounces) shredded Cheddar cheese
Windy City Chili

In large Dutch oven, brown beef in oil, stirring to separate; drain
- 1 lb. lean ground beef
- 2 Tbsp. vegetable oil
- 2 cans (14.5 oz. each Diced Tomatoes in Natural Sauce
- 1 cup onions, chopped
- 3 garlic cloves, minced
- 1 tsp. salt
- 1 tsp. Worcestershire sauce
- 1 Tbsp. chili powder
- 1 tsp. ground cumin
- 1 tsp. dried marjoram
- 1/2 tsp. black pepper
- 2 Tbsp. sugar
- 1 bay leaf
- 1 cup Tomato Sauce (May add an additional cup if desired)
- 2 cans (15.5 oz. each) Chili Beans (hot or mild)
- 2 cans (15.5 oz. each) red Kidney Beans (light or dark), drained
- 1 Hot sauce
- 1 lb. elbow macaroni, cooked according to package directions
- 2 Tbsp. butter
- 1 Grated cheddar cheese (optional)
- 1 Oyster crackers

1. Preheat oven to 350°. Place almonds in a single layer in a shallow pan
- 2 tablespoons slivered almonds
- 1 (2.1-oz.) package frozen mini-phyllo pastry shells, thawed
- 2 tablespoons heavy cream, divided
- 1/2 teaspoon instant espresso powder
- 1 (3-oz.) package cream cheese, softened
- 3 tablespoons powdered sugar
- 2 tablespoons light brown sugar
