Southwestern Vegetables & Rice

In Dutch oven, combine first seven ingredients
- 1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
- 1 package (12 ounces) frozen vegetarian meat crumbles, thawed
- 1 package (12 ounces) frozen Southwestern corn, thawed
- 1 can (10-3/4 ounces) condensed tomato soup, undiluted
- 1 cup water
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1 cup uncooked instant rice
- 1 cup (4 ounces) shredded Monterey Jack cheese
Sweet and Salty Cookie Pie

1 Heat oven to 350°F. Unroll pie crust on ungreased cookie sheet; prick generously with fork
- 1 refrigerated pie crust, softened as directed on box
- 1/3 cup Chocolate Flavored Hazelnut Spread
- 1/2 cup miniature semisweet chocolate chips
- 1/2 package (12 cookies) refrigerated sugar cookies
- 1/2 cup toffee bits
- 1/4 teaspoon kosher (coarse) or sea salt
Strawberry Margarita Cupcakes

1 Heat oven to 350°F (325°F for dark or nonstick pans)
- 1 box white cake mix
- 1 cup bottled strawberry margarita or daiquiri mix
- 1/3 cup vegetable oil
- 1/4 cup tequila
- 3 egg whites or whole eggs
- 1/2 cup shortening
- 1/2 cup butter, softened
- 1 box (1 lb) powdered sugar (4 cups)
- 2 to 3 tablespoons bottled strawberry margarita or daiquiri mix
- 12 slices lime, each cut in half

- 1 1 1 can (12 oz.) Evaporated Milk
- 1 1 1 can (13.5 oz.) Coconut Milk
- Pinch Pinch salt
- 1 1 35% cup 35% whipping cream
- 2 2 2 tbsp. icing sugar
- 1 1 1 tbsp. dark rum
- 2/3 2/3 2/3 cup shredded coconut, toasted

- 1 1/4 chicken breasts, skinned, bones and cut into 1-inch pieces

- 1/2 cup homemade soft, coarse bread crumbs, made from French bread, lightly toasted (see Notes)
