1. Spray 10 inch nonstick skillet with cooking spray
- Vegetable cooking spray
- 1 lb skinless, boneless chicken breasts, or thighs, cut into strips
- 1 cup broccoli florets
- 2 medium carrots, cut into matchstick-thin strips (about 1 cup)
- 1 medium onion, cut into wedges (about 1/2 cup)
- 1 can Campbell's cream of broccoli soup
- 2/3 cup water
- 2 tsp soy sauce
- 1/4 tsp ground ginger
- 4 cups hot cooked rice
Steak Fajitas

In a large skillet. heat one Tbs of the vegetable oil over medium heat
- 2 Tbs vegetable or Canola oil
- 2 Red Onions, halved and sliced
- 2 Red Bell Peppers, stemmed, seeded and sliced
- 1 Jalapeno, stemmed, seeded and chopped
- 1 tsp sugar
- 1 lb fajita-sliced beef strips
- 1 Tbs taco, fajita or Mexican seasoning blend
- 1 lime, halved
- 10 (6 inch) flour tortillas
- To serve (pick and choose) salsa
- Crumbled queso freso, or other white crumbly Mexican cheese (feta works), or shredded Mexican blend cheese
- Sour cream
- Lime wedges
- Guacamole
