With a bit of oil in your fry pan, saute up the onion and garlic until it's nice and soft

  • 1 onion, peeled and sliced
  • 1 clove of garlic, peeled and crushed
  • 1-2 tsp. chili powder
  • 1 tsp tomato paste
  • 2 - 14 oz cans kidney beans, drained & rinsed
  • 1 - 14 oz can diced tomatoes
  • salt and pepper
  • 1/2 green pepper (whole ok)
  • 1/2 red pepper (whole ok)
  • 6 large flour tortillas
  • 1/2 cup - 1 cup grated cheddar cheese
  • OPTIONAL - cilantro, taco seasoned ground beef
