Mexican Bean Wraps

With a bit of oil in your fry pan, saute up the onion and garlic until it's nice and soft
- 1 onion, peeled and sliced
- 1 clove of garlic, peeled and crushed
- 1-2 tsp. chili powder
- 1 tsp tomato paste
- 2 - 14 oz cans kidney beans, drained & rinsed
- 1 - 14 oz can diced tomatoes
- salt and pepper
- 1/2 green pepper (whole ok)
- 1/2 red pepper (whole ok)
- 6 large flour tortillas
- 1/2 cup - 1 cup grated cheddar cheese
- OPTIONAL - cilantro, taco seasoned ground beef
Teriyaki Chicken (Salmon)

Marinate meat for 1 hr – overnight
- 1 lb. salmon or chicken
- 12 oz. teriyaki marinade
Mexican Crockpot Chicken

Place chicken in slow cooker
- Boneless, Skinless chicken breasts (3-4)
- 1/2 - 1 packet taco seasoning
- 16 oz jar of Salsa
- 1 can of black beans
- 1/3 cup sour cream
- 1/3 cup cream cheese
Salsa Chicken

South Beach Phase 2
- 8 c. finely shredded iceberg lettuce
- 3 Tbsp. chili powder
- 1 tsp. ground cumin
- 1 lb. boneless, skinless chicken breast, cut into 1" pieces
- 2 large egg whites
- 2 Tbsp. extra-virgin olive oil
- 8 oz. chunky tomato salsa
- 1/2 c. fat-free sour cream
- Cilantro sprigs - opt.
Apple and Zucchini Salad

In a serving bowl, combine oil, lemon juice, vinegar, sugar, basil, salt and pepper – Blend well
- 1/3 c. salad (vegetable) oil
- 1 T. lemon juice
- 2 T. white wine vinegar
- 1 tsp. each sugar and dry basil
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 med. zucchini
- 3 med. red apples
- 1/2 med. red onion, thinly sliced lengthwise
- 1 green pepper, seeded and cut in matchstick size pieces
Buffalo Chicken Cheese Dip

Mix all ingredients and bake at 350 for approximately 30 minutes
- (Double ingredients for 9x13 pan)
- 3/4 block Cream Cheese
- 1/2 cup Ranch or Bleu Cheese dressing
- 1/2 cup Buffalo sauce
- 1 cup shredded cheddar cheese
- 12 oz. chicken in a can
Balsamic Chicken

South Beach Phase 1
- 6 boneless, skinless chicken breast halves
- 1 1/2 tsp. fresh rosemary leaves, minced, or 1/2 tsp. dried
- 2 cloves garlic, minced
- 1/2 tsp. Freshly ground black pepper
- 1/2 tsp. salt
- 2 Tbsp. extra-virgin olive oil
- 6 Tbsp. white wine (opt)
- 1/4 cup balsamic vinegar
Tuna Wrap Salad

Mix the mayo, tuna, a few squeezes of the lime and black paper in a large bowl
- 7 ounces of good grade canned tuna
- 3 tablespoons of light mayonnaise ; mix
- 1/2 Lime ; squeeze
- 4 large lettuce leafs
- black pepper ; grind
- 1 Large Tomato ; cubed
Feta-Stuffed Cherry Tomatoes

Cut the tops off the cherry tomatoes
- 32 Cherry tomatoes (or 8-12 roma tomatoes)
- 4 ounces cream cheese, softened
- 1/4 cup sour cream
- 4 ounces feta cheeese
- 2 Tbsp. chopped fresh chives or green onion
- 1/4 tsp Italian seasoning
