Italian Rice Salad

VINAIGRETTE: In a small bowl, whisk ingredients together
- VINAIGRETTE:
- 1/2 cup canola oil
- 1/3 cup snipped fresh Italian parsley
- 1/4 cup white wine vinegar
- 3 Tbsp snipped fresh dill or 2 tsp dried dillweed
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp snipped fresh basil or 1/4 tsp dried
- 1 tsp snipped fresh oregano or 1/4 tsp dried
- 2 cloves garlic, minced
- SALAD:
- 3 cups cooked, slightly warm basmati rice (or pasta)
- 1 cup chopped red, green and/or orange pepper
- 1 - 6 oz. jar quartered marinated artichokes hearts, drained
- 1/3 cup chopped red onion
- 1/4 cup raisins
- 2 Tbsp drained capers
- organic salad greens or torn romaine
- fresh basil leaves
Thai Chicken Salad Wraps

Mix dressing ingredients together in a small bowl with a wire whisk until smooth
- SALAD:
- Spinach flavored tortillas
- 2 cans chunk light chicken
- 1.5 cups coleslaw mix
- 1/2 cup chopped seeded cucumber
- 1/2 cup chopped fresh cilantro
- 1/4 cup coarsely chopped dry-roated peanuts
- DRESSING:
- 1 Tbsp packed brown sugar
- 2 Tbsp creamy peanut butter
- 2 Tbsp rice vinegar or cider vinegar (white vinegar ok)
- 1 Tbsp fish sauce
- 1/8 tsp ground red pepper
- (DOUBLING THIS IS BEST)
Northwest Autum Salad (Waldorf)

Make dressing in advance and let sit
- SALAD:
- 1 head Red leaf lettuce
- 1 head bibb lettuce
- 1 cup watercress leaves
- 2 apples (Fuji or Gala)
- 3/4 cup candied walnuts
- 3/4 cup crumbled blue cheese
- 1 avacado (opt.)
- DRESSING:
- 1/2 cup veg. oil
- 1/4 cup cider vinegar
- 2 Tbsp. shallots
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. maple syrup
- 1/4 tsp. ea salt and fresh ground pepper
Multi-Layer Coffee Cake (Dana)

For BATTER, sift together the flour and baking powder
- BATTER:
- 1/2 c. Butter (softened)
- 1 c. sugar
- 2 eggs
- 1 cup milk
- 3 drops vanilla
- 1/2 cups flour
- 2 tsp. baking powder
- FILLING:
- 1 c. brown sugar
- 1 tsp. cinnamon
- 2 Tbsp. flour
- 1 Tbsp. butter
- 1 c. Walnuts (Chopped)
Spicy Broccoli Frittata

Preheat oven to 350. Whisk cream cheese until smooth; gradually add eggs, water and mustard and whisk unitl smooth
- 4 oz. cream cheese, softened
- 8 eggs
- 2 Tbsp. water
- 1 Tbsp. dijon mustard
- 1/2 cup sliced green onions (2 onions)
- 2 plum tomatoes
- 1 Tbsp. butter
- 1 tsp. crushed red pepper flakes
- 2 cups broccoli florets
- 1 cup shredded mozzarella cheese, divided
Blueberry Buttermilk Coffee Cake

Preheat oven to 350 degrees F (175 degrees C)
- 1/2 cup butter
- 1 1/3 cups white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups buttermilk
- 4 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups blueberries
- 2/3 cup all-purpose flour
- 2/3 cup white sugar
- 6 tablespoons butter, softened
Simple Italian Pasta Salad

Mix together and let set overnight
- 1 lb. pasta cooked (rotini)
- 1 12 oz. bottle Italian dressing
- 3 tomatoes cut up or 12 cherry tomatoes
- 1/2 green pepper chopped (or use whole)
- 1 cucumber peeled and cubed
- Some onion (to taste)
- 10 black olives cut in half
- 1/2 of 1 jar Salad Supreme seasoning
Vegetable Egg Bake

Can make night before and refrigerate Beat eggs, milk and seasonings Stir in bread, cheese and onion
- 8 slices white bread, cubed
- 6 eggs
- 3 cups milk
- 1 tsp. dry mustard
- 1 tsp. salt
- 2 cups shredded cheese
- 3 Tbsp. onion
- Pack of California medley veggies (or any other veggies)
Slow Cooker Sweet and Tangy Chicken

In a large bowl, mix together barbecue sauce, pineapple with juice, green bell pepper, onion, and garlic
- 2 (18 ounce) bottles barbeque sauce
- 1 (15 ounce) can pineapple chunks
- 1 green bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 boneless, skinless chicken breast halves
Sausage Egg Bake

Tear up bread and place pieces in a greased 13×9 baking dish
- 4-6 slices of whole wheat bread
- 1 lb. bulk sausage meat or links
- 1 cup grated sharp cheddar cheese
- 6 eggs
- 2 cup milk
- 1 tsp. dry mustard
- 1 tsp. salt
- dash of pepper
