Spaghetti Sauce

Brown beef n a large heavy bottomed pan, then drain off fat
- 1/2 lb. ground beef
- 1 lg. onion chopped
- 1 green pepper chopped
- 1 garlic clove chopped
- 2 6-oz. cans tomato paste
- 1 8-oz. can tomato sauce
- 1 14-oz. can stewed tomatoes
- 1 T. Italian seasoning (or fresh basil)
- 1 T. Worcestershire sauce
- 2 T. sugar
- 1 tsp. salt
- 1 cup water
Bran Bread

Beat egg & baking soda (I prefer to add baking soda to dry ingredients – it blends better that way)
- 1 egg
- 1 tsp. baking soda
- 1 c. all bran
- 1 c. quick oatmeal
- 1 c. whole wheat flour
- 1 c. sugar (can sub 1/2 c. sugar with 1 individual applesauce cup)
- 1 c. lowfat buttermilk (can sub 1 T vinegar or lemon juice plus milk to make 1 cup)
- 1 tsp. cinnamon (opt)
Whole Wheat Soda Bread

Heat oven to 375 deg F. Grease cookie sheet
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp. salt
- 1 cup buttermilk (to sub, use 1 Tbsp vinegar or lemon juice plus milk to make 1 cup)
- 2 Tbsp. honey
- 1 egg, well beaten
Strawberry Bellini

Place 8 Champagne flutes in the freezer for 20 minutes
- 1 bottle Prosecco
- 2 cups pureed and strained fresh strawberries
Hot Cross Buns

Combine yeast and 1/2 cup warm water in a large mixing bowl; let stand 5 minutes
- Sugar Glaze:
- 2 (1/4-ounce) envelopes active dry yeast
- 1/2 cup warm water (100° to 110°)
- 1 cup warm milk (100° to 110°)
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 teaspoon salt
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
- 5 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 cup raisins
- 1 cup powdered sugar
- 1 1/2 Tbsp milk
- 1/2 tsp vanilla extract
- Combine all ingredients, whisk until smooth
Easy Herb Roasted Turkey

Instructions Thaw turkey in cold water day/night before
- 1 (12 lb.) whole turkey
- 3/4 c. olive oil
- 2 Tbsp. garlic powder
- 2 tsp. dried basil
- 1 tsp. ground sage
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 c. water

- 1/2 cup butter or margarine, softened
- 1/3 cup powdered sugar
- 2 Tbsp milk
- 1/2 tsp vanilla
- 1/2 pkg (7- or 8-ounce size) almond paste

- Coarse sugar crystals (decorating sugar) if desired

Chicken Peanut Noodles

Cook the pasta according to directions
- 10-12 oz spaghetti
- 2 carrots, peeled, halved, and thinly sliced
- 2 boneless skinless chicken breasts, sliced (or canned)
- 1/3 cup hoisin sauce
- 1/4 cup peanut butter
- 2 Tbsp cider vinegar
- 1 clove garlic, minced
- 1/2 cup water
- 1/2 tsp hot sauce (or red pepper flakes)
- 1 1/2 cups bean sprouts
- 2/3 cup thinly sliced red onion (go light)
- 1 cup fresh chopped coriander or parsley (or cilantro)
- 1/4 cup chopped roasted peanuts
Broccoli Salad

Start a pot of boiling water
- SALAD:
- 2 large heads of broccoli
- 8 pieces of bacon, fried up and crumbled
- 3 tomatoes, seeded and finely sliced
- bunch of chives (with flowers if you can get them), chopped (keep the flowers aside)
- DRESSING:
- 2 tsp dijon mustard
- 6 Tbsp extra virgin olive oil
- 2 Tbsp white wine vinegar
- salt and pepper
- 1/2 clove of garlic, peeled and finely grated
