Basic Vinaigrette Dressing

- 1 medium onion, peeled, quartered and sliced
- 1 – 28 oz. can plum tomatoes
- 2 Tbsp. tomato paste
- 2 cups chicken stock or canned chicken broth
- 1 Tbsp. brown sugar
- 1 bay leaf
- pinch of cayenne or dried hot pepper flakes (opt)
- pinch allspice
- 2 whole cloves or a pinch ground cloves
- salt
- freshly ground black pepper
- 1 cup half-and-half
Senegalese Peanut Soup

- 15 oz. can chickpeas, rinsed and drained
- 3 cups reduced-sodium chicken broth
- 3 tbsp. natural creamy peanut butter
- 1 tsp. Peanut Oil
- 2 onions, chopped
- One 1 inch piece peeled gingerroot, minced
- 1 1/2 tsp. curry powder
- 1/2 tsp ground cumin
- 14.5 oz can diced tomatoes
- 1/4 tsp cayenne pepper, or to taste

Chili (Dana's)

Brown ground beef, onion, green pepper, celery and garlic in olive oil til onion is tender
- 1 lb. ground beef
- 1/2 medium onion, chopped
- 1 green pepper, chopped
- 1 large celery rib, chopped
- 1 clove garlic minced or crushed
- 1 tsp. minced jalepeno (opt)
- 16 oz. stewed tomatoes
- 8 oz. Tomato sauce
- 8 oz. tomato paste
- 1/4 cup chili powder
- 1 Tbsp. ground cumin
- 1 tsp. ea salt, garlic salt, onion salt
- 1/8 tsp. paprika
- 1 bay leaf crumbled
- 1/2 tsp. ground black pepper
- 2/3 cup beer
- 16 oz can kidney beans, drained
Summer Blue Burger Salad

Combine vinegar, oil, rosemary, thyme, salt, and pepper in a jar with tight fitting lid
- 3 Tbsp. cider vingegar
- 3 Tbsp. olive oil
- 1/2 tsp. dried rosemary leaves
- 1/4 tsp. dried thyme leaves
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 1/4 in-thick slices red onion
- 4 veggie burgers
- 6 cups torn romaine lettuce
- 1 oz. crumbled blue cheese
- 2 Tbsp. chopped walnuts, toasted
Cinnamon Pork Tenderloin

Pork Chop Rice Bake

Mix rice, soup, water and 1/2 of the onion soup mix
- 4 pork chops
- 1 cup raw rice (not Minute Rice) - Wild Rice is best
- 1 can beef consomme (soup)
- 1 Can Cream of Mushroom Soup
- 1/2 can water
- 1 pkg. Lipton onion soup mix
Citrus-Kissed Chicken Fingers

In a resealable bag, toss the chicken togethter with the o
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-in strips
- 1/2 cup frozen orange juice concentrate, thawed
- 4 cloves garlic, minced
- 2 large eggs
- 2.5 cups frosted flakes cereal, crushed (I use bread crumbs)
- 2/3 cup shredded unsweetened coconut (sweetened ok)
- 2 Tbsp. light brown sugar
- 3 Tbsp. butter, melted
Green Bean Casserole

- 1 can slivered French green beans (drained)
- 1/2 c. milk
- 1/2 tsp. marjoram

Taco Salad

Brown ground beef and add taco seasoning as per directions on package
- 1 lb. ground beef or turkey
- 1 pkg. Taco Seasoning
- 1 head of iceberg lettuce
- 2-3 tomatoes
- 1 onion (or 4-5 green onions)
- 1 can of kidney beans (or garbanzo)
- 1 bag Frozen Corn
- Cilantro
- Cheddar Cheese (or Mexican / Taco blend)
