- 1/4 cup finely chopped red onion
- 2 tablespoons lime juice
- 2 tablespoons rice vinegar
- 1 tablespoon chopped fresh cilantro
Quinoa Black Bean Casserole

1. Preheat oven to 350° F
- 1 cup cooked quinoa
- 3 cups cooked black beans (or two
- 15-ounce cans, drained and rinsed)
- 2 large sweet potatoes, shredded
- 1 cup shredded low-fat cheddar cheese
- 1 tbsp ground cumin
- Liberal pinches salt and pepper
- 2 eggs
- 1 cup salsa
- 2 tbsp fresh cilantro, chopped, for garnish
- I cooked up a batch of dried beans that I seasoned with onions, garlic, chiles and spices. If you use canned beans, you might need more spices.
- Serve this with steamed broccoli or wilted spinach and a dollop of light sour cream or plain Greek yogurt.

- 3/4 cup frozen (thawed) limeade concentrate (from 12-oz can)
- 2 containers (6 oz each) Yoplait® Thick & Creamy Key lime pie yogurt
- 1 box (4-serving size) French vanilla instant pudding and pie filling mix
- 1 1/2 teaspoons grated lime peel
- 1 container (8 oz) frozen whipped topping, thawed
- 1 to 4 drops green food color
- Extra whipped topping, if desired
- Lime slices, if desired
- Fresh mint leaves, if desired

- 1/2 cup firmly packed dark brown sugar
- 2 cups all-purpose flour
- 1 1/4 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- Toppings
- 1 1/2 cups heavy or whipping cream
- 3 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- Pint of vanilla ice cream (you’ll have leftover; you’re welcome)
- Maraschino cherries (optional)
