Diamond Club French Dressing

Mix all ingredients in a blender & let sit at least overnight
- 1 c. sugar
- 1 c. vinegar
- 1 c. veg. oil
- 1 tsp. salt
- 1 bottle (20 oz.) ketchup
- 1/2 onion, minced
- 1/4 tsp. garlic salt
Hot Ham & Cheese

Melt cheese, butter, & milk together; add ham
- 2 lbs. Velveeta Cheese
- 1 stick butter
- 1 can Carnation Milk
- 3 to 4 lbs. shaved ham
Chicken Enchilada Casserole

Boil the chicken breasts in water with a little salt & garlic powder added to flavor the broth
- 4 to 6 chicken breasts
- 1 can cream of chicken soup
- 2 to 3 cups chicken broth
- 1 tsp cumin or more to taste (can use ground cumin, cumin seed or combination of both)
- 1/2 tsp garlic powder (can use 1 or more cloves of garlic minced)
- 1/2 small can chopped green chili peppers
- (can use 1 jalapeno pepper finely chopped if you like a hotter taste)1/3 cup chopped onion
- 1/4 stick of butter
- 2 to 3 tablespoons flour
- salt & pepper to taste
- flour tortillas
- grated cheese (can use cheddar or a mexican blend is great!)
Barbequed Ribs

Heat oven to 450º. Salt & pepper ribs lightly & arrange in large, shallow roasting pan, meaty side up
- 4 lbs. pork spareribs, cut to serving size
- 1 c. catsup
- 1/2 c. Worcestershire sauce
- 1 tsp. chili powder
- 1/2 tsp. Pepper
- 1 tsp. salt
- 1 lemon, thinly sliced
- 1 onion, thinly sliced
Rhubarb Custard Pie

Beat eggs lightly & add salt & sugar
- 9 ” pie crust
- 3 eggs
- 1 1/2 c. sugar
- 1/2 tsp. salt
- 1/2 c. cream or milk
- 1 tsp. vanilla
- 2 T. flour
- 2 1/2 c. diced rhubarb
Spinich Zesty Salad

Throw it all together!
- Dressing:
- 5 ounces fresh spinach (half a 10 ounce bag)
- 3/4 cup chopped celery
- 3/4 cup dried cranberries
- 1 can (15 ounces) mandarin oranges - or fresh Cuties or Halos
- 1 large Granny Smith Apple
- 1 teaspoon lemon juice
- 1/3 cup pecans
- Optional: Feta cheese & Orecchiette (little ears) pasta
- 4 tablespoons olive oil or vegetable oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons white wine vinegar
- 2-4 teaspoons white sugar - Or use Honey to taste or Stevia
- 1/8 teaspoon each: paprika, onion powder
- 1 tablespoon poppyseeds
