  • 3 extra-large eggs at room temperature
  • 1 1/2 cups granulated sugar
  • grated lemon zest (1 lemon) optional
  • 5 Tbl. lemon juice
  • 3 Tbl. flour
  • 3/4 tsp. baking powder
  • Frosting
  • 2 cups powdered sugar
  • 2 Tbls melted butter
  • 1 Tble. lemon juice
  • add tiny amounts of water to make spreadable.
