Mexican Pie

Cook burger, onions, & garlic in skillet over med heat
- 1/2 lb. burger 1 c. chopped onion
- 2 cloves garlic chopped finely
- 4 oz. chopped green chilies (drained)
- 4 fat free 10" flour tortillas
- 2 c. shredded Montery Jack
- cheese (8 oz.)
- 8 oz. fat free refried beans
- (1/2 16 oz. can)
- 1/2 c. med. hot Pace salsa
- sour cream as desired
Beef Stoganoff

Cut meat across grain into ½" strips, about 1 ½" long
- 1 lb. beef tenderloin or sirloin steak, 1/2” thick
- 2 T. butter
- 1/2 lb. mushrooms, sliced
- 1 medium onion, minced, about 1/2 c.
- 1 can (10 1/2 oz.) condensed beef broth
- 2 T. catsup
- 1 sm. clove garlic
- 3 T. flour
- 1 c. dairy sour cream
- 3-4 c. cooked noodle
Meatloaf

Soak bread crumbs in milk; add meat, eggs, onion, & seasonings; mix well
- 2/3 c. dry bread crumbs
- 1 c. milk
- 1 1/2 lbs. ground beef
- 2 beaten eggs
- 1/4 c. grated onion
- 1 tsp. salt
- 1/2 tsp. sage
- dash pepper
- Sauce: 3 T. brown sugar
- 1/4 c. catsup,
- 1/4 tsp. nutmeg,
- 1 tsp. dry mustard
Slow-Cooker Chicken with Creamy Paprika Sauce

1. In 3 1/2- to 4-quart slow cooker, place chicken and onion
- 10 chicken thighs (about 3 lb), skin removed
- 1 medium onion, sliced
- 3 tablespoons Progresso™ chicken broth (from 32-oz carton)
- 2 tablespoons paprika
- 1/2 teaspoon salt
- 3 cups uncooked egg noodles
- 3 tablespoons cornstarch
- 3 tablespoons cold water
- 1 container (8 oz) sour cream-and-chive potato topper

Chicken Tikka Masala Pizza

In a bowl, marinade the chicken with the Marinade for at least an hour in the refrigerator
- Marinade:
- 10 oz skinless and boneless chicken breast, cut into 1/2-inch cubes
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 jalapeno, deseeded
- Salt to taste
- One (1) 12-inches store-bought pizza crust or three (3) 7-inches mini pizza crusts
- Olive oil for brushing
- 1/4 onion, thinly sliced
- 1 cup mozzarella cheese
- Handful of coriander leaves/cilantro, chopped, save some for garnish
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon ground garam masala
- 1/2 teaspoon minced fresh ginger
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon lemon juice
- 2 tablespoons plain yogurt
- Pinch of cinnamon
- Tomato Sauce:
- 4 oz tomato sauce
- 2 tablespoons plain yogurt
- 2 tablespoons heavy cream
- Spice Mix:
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garam masala
