Deep Dish Apple Pie

Mix ½ c. sugar, brown sugar, salt, lemon juice, zest, & cinnamon in large bowl
- 1/2 c. plus 1 t. sugar
- 1/4 c. packed light brown sugar
- 1/4 t. salt
- 1 T. lemon juice
- 1/2 t. grated lemon zest
- 1/8 t. cinnamon
- 2 1/2 lb. firm tart apples (about 5 med.) peeled & cut in 1/4" slices
- 2 1/2 lb. firm sweet apples (about 5 med.) peeled & cut in 1/4" slices
- 1 recipe Fool-Proof Vodka Pie Pastry
- 1 egg white, beaten lightly
Calico Carrot Cake

Cook carrots until thawed (or substitute real carrots, boil until tender & add butter)
- 1 10 oz pkg. carrot nuggets frozen in butter sauce
- 2 c. flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 1 tsp. salt
- 1 c. plus 2 T. veg. oil
- 4 eggs
- 1 c. raisins
