- 1/4 cup mirin (sweet Japanese Rice wine)
- 1/4 cup soy sauce
- 2 tablespoons light brown sugar
- 2 teaspoons grated fresh ginger
- 4 spring onions, white part only, sliced
- splash of sesame oil
- 800 g (1 3/4 pounds) chicken thigh fillets (no skin or bones), cut into bite-sized pieces
- 1/2 tablespoon neutral vegetable oil
- freshly ground black pepper
- handful of parsley leaves, chopped
- rice, to serve
Zesty Ham & Cheese Bread Squares

1.Preheat oven to 375 degrees F
- 1 (16.3-oz) buttermilk biscuits
- 1 (10.2-oz.) buttermilk biscuits
- 1 1/2 c. salsa
- 2 c. shredded Monterey Jack cheese
- 1 c. diced cooked ham
- 3 scallions (green onions), sliced

Cucumber Pickles

- 3 c. sugar
- 2 c. vinegar
- 2 Tbls. Pickling Salt
- 1 tsp. Mustard seed
- 1 tsp. Tumeric
- 1 tsp. Celery seed
Big Mac Sauce

- 1/2 cup mayo (Duke’s, duh)
- 2 tablespoons French Dressing
- 4 teaspoons sweet pickle relish
- 1 tablespoon finely minced onion
- 1 teaspoon white vinegar
- 1 teaspoon sugar
- 1/8 teaspoon pepper
BBQ Baked Beans

1. Preheat oven to 350º. 2
- 2 15-oz. cans small white beans (with liquid)
- 2 Tbls. water
- 1 Tbls. cornstarch
- 1/2 c. ketchup
- 1/2 c. dark brown sugar (100 g.)
- 2 Tbls. white vinegar (24 g.)
- 4 tsp. minced fresh onion (17 g.)
- 2 pieces cooked bacon, crumbled
- 1/2 tsp. dry mustard
- 1/4 tsp. salt
- dash pepper
- dash garlic powded
Hawaiian Bread

This recipe makes two regular 9x5 loaves of bread
- 3 cups all-purpose flour
- 3/4 teaspoon salt
- 1 teaspoon baking soda
- 2 cups granulated sugar
- 1 teaspoon ground cinnamon
- 1 cup chopped walnuts
- 3 eggs
- 1 cup melted coconut oil (or oil of your choice)
- 2 cups mashed very ripe banana (4 medium bananas)
- 1 (8 ounce) can crushed pineapple, drained
- 2 teaspoons vanilla extract
- 1 cup flaked coconut, preferably unsweetened
- 1 cup maraschino cherries, drained and diced

- 1 1/4 c. diced potatoes
- 1 c. chopped celery
