Tortilla Soup

1. In heavy pot, bring stock to a boil
- 9 c. chicken broth
- 6 cloves roasted garlic
- 1/2 c. chopped tomatoes
- 1 yellow onion
- 2 fresh jalapeno peppers, sliced into rings
- 1 tsp. dried oregano
- 2 c. shredded, cooked chicken meat
- 1 lime, juiced
- 6 (6 inch) corn tortillas cut into strips and toasted for garnish
Taco Salad

Brown hamburger, drain. Stir in taco seasoning mix & cool
- 1 lb. hamburger
- 1 pkg. taco seasoning mix
- 8 oz. 1000 Island dressing
- 1 head lettuce, shredded
- 1 tomato, chopped
- 1 green pepper, chopped
- 2 c. colby cheese, shredded
- 1 sm. pkg. nacho cheese chips, crushed

1. Whisk first 9 ingredients (flour through cardamom) in a medium bowl to blend well; set aside

- 3 1/2 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon

- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/8 teaspoon ground cardamom
- 1 cup sugar
- 3 tablespoons unsalted butter, at room temperature
- 1 large egg
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 tablespoon molasses
- 1 cup canned pure pumpkin
- Canola or Peanut Oil (for deep-frying)
- 1 cup sugar
- 3 teaspoons cinnamon

- 1 c. powdered sugar (130 g.)
- 1 c. sugar (192 g.)
- 1 c. butter
- 1 c. veg. oil (211 g.)
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. salt
- 1 tsp. soda
- 1 tsp. cream of tartar
- 4 1/4 c. flour (422 g.)

- 3 (15 1/2 oz.) can Mexican-style chili
- beans, undrained
- 1 (15 1/4 oz.) can whole kernel corn,
- 1 (15 oz.) can tomato sauce
- 1 (14 1/2 oz. can diced tomatoes,
- 1 (4 1/2 oz.) can chopped green chilies
- 1 (1 1/4 oz.) envelope taco seasoning
- 1 (1 oz.) envelope Ranch-style dressing
- 1 1/2 c. water
- Toppings: corn chips, shredded lettuce, chopped tomato, sour cream, shredded Cheddar chees
Sweet & Sour Meatballs

Mix all ingredients, shape into 1 ½ balls
- 1 lb. hamburger
- 1/2 c. cracker crumbs
- 1/4 c. milk
- 2 or 3 T. onion, finely chopped
- 1 tsp. salt
- 1/2 tsp. worcestershire sauce
- 1 beaten egg

- 1/2 c. fat free milk
- 8 pineapple chunks
- 1/3 c. ice cubes
- 1 packet No Sugar Added Vanilla Crème NESTLÉ® CARNATION® INSTANT BREAKFAST
- 1/2 banana
- 1 T. pineapple juice

- 1 pound dry Great Northern beans
- 8 c. water
- 12 baby carrots
- 1 c. chopped onion
- 1/2 pound chopped ham

Swedish Pot Roast

- 5 lb. lean, boneless chuck roast
- 6 T. butter
- 1 1/2 c. chopped onion
- 2 cloves garlic, crushed
- 1/3 c. flour
- 1/4 c. wine vinegar
- 2 T. honey or corn syrup
- 2 - 10 1/2 oz. cans condensed beef broth
- 2 bay leaves
- 4 parsley sprigs
- 1 tsp whole peppercorns
