Nacho Pot Pie

Heat oven to 375°F. In 4-quart saucepan, heat broth over medium-high heat
- 3 cups chicken broth (from 32-oz carton)
- 1/2 cup butter or margarine
- 2 medium carrots, cut into 1/4-inch slices
- 2 shallots, finely chopped (1/2 cup)
- 3 cloves garlic, finely chopped
- 2 tablespoons taco seasoning mix (from 1-oz package)
- 3/4 teaspoon freshly ground pepper
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup whipping cream
- 2 cups shredded deli rotisserie chicken (from 2-lb chicken)
- 1 can (15 oz) black beans, drained, rinsed
- 1 bag (12 oz) Green Giant™ Steamers™ Niblets® frozen corn, thawed
- 4 cups crushed tortilla chips
- 1 cup shredded Mexican cheese blend (4 oz)
Nut Goodie Bars

Melt together first 3 ingredients
- 1 12 oz. pkg. chocolate chips
- 1 12 oz. pkg. butterscotch chips
- 1 sq. unsweetened chocolate
- 2 c. peanut butter
- 2 sticks butter
- 1/2 c. evaporated milk
- 1/4 c. dry vanilla pudding mix
- (Cook & Serve!)
- 2 lbs. powdered sugar
- 1 lb. Spanish Peanuts
Barbecue

Brown burger & onion, drain, mix in rest
- 3 lbs. hamburger
- 1 1/2 c. chopped onion
- 3 tsp. salt and pepper
- 1 1/2 tsp. Mustard
- 5 tsp. Vinegar
- 29 oz. tomato sauce
- 1 c. brown sugar
Oatmeal Cookies

Heat oven to 350°. Mix thoroughly shortening, sugars, egg, water, & vanilla
- 1 1/2 c. shortening (288 g.)
- 2 c. brown sugar (500 g.)
- 1 c. sugar (206 g.)
- 2 eggs
- 1/2 c. water (130 g.)
- 2 tsp. vanilla
- 2 c. flour (270 g.)
- 2 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. soda
- 1 tsp. cloves
- 2 c. raisins (320 g.)
- 2 c. nuts (240 g.)
- 6 c. Quaker Oats (480 g.)
Potato Bread for Bread Machine

1 1/2 pound loaf Basic (takes 2 hours 40 minutes in my machine) or Regular Light Light crust
- 1-1/4 cup hot water (can replace 1 TB of water with 1 TB of white vinegar)
- 3 TB vegetable oil, olive oil, butter or shortening
- 3 TB sugar
- 1 1/2 teaspoon salt
- 3 TB mashed potato flakes
- 2 TB dry milk powder
- 3 cups bread flour
- 2 teaspoons active dry yeast
- If you want to make wheat bread, substitute 3/4 cup of wheat flour for 3/4 cup of the white bread flour.
Oreo Balls

Mix crushed oreos & cream cheese
- Crush 1 pkg. Oreo Cookies
- 8 oz. Cream cheese
- 6 squares almond bark (or chocolate)
Sherbet Dessert

***Topping: 6 T. lemon juice 9 T
- Crust:
- 3 c. crushed Ritz crackers
- 8 T. sugar
- 8 T. butter, melted
- Mix together & pat in 9 X 13 pan;
- Freeze.
- Mix together:
- 1 qt. sherbet (orange or other favorite)
- 1/2 gal vanilla ice cream
- Spread on frozen crust. Freeze.
Chicken Cordon Bleu-Croque Monsieur

For the chicken, preheat oven to 400°F
- For the chicken
- 1 large chicken breast
- 1/2 cup panko crumbs
- 2 tablespoons butter, melted
- 1/4 teaspoon garlic powder
- 1/4 cup flour
- 1 egg, lightly beaten
- Kosher salt and pepper
- For the sandwich
- 4 slices Challah bread, cut 1-inch thick
- 2 tablespoons butter, softened
- 2-4 large ham slices, to taste
- 3 - 4 Gruyere, Swiss, or Havarti slices, to taste
- 1/4 cup grated Parmesan
- For the sauce
- 2 tablespoons unsalted butter
- 2 tablespoons flour
- 1 cup whole milk or half and half, scalded
- 1 teaspoon mustard powder
- Splash of sherry (optional)
- Kosher salt and pepper
- 1/2 cup grated Parmesan
Mini Apple Pies

Unroll your first pie crust and cut several circles out
- Mix the apples with:
- 8 cups of apples cut into 1/2 inch bits
- 12 tablespoons of flour
- 1 1/2 c of sugar
- 4 heaping teaspoons of cinnamon
- 1/4-1/2 teaspoon of nutmeg (depending on how much you like nutmeg...you could also leave it out)
- You will also need:
- 4 tablespoons of chilled butter cut into 24 equal portions.
- two boxes of Pillsbury pie crusts (four chilled NOT frozen crusts)
Pecan Fingers

Heat oven to 350°. Cream butter & powdered sugar
- 3/4 c. butter
- 3/4 c. powdered sugar - 90 g.
- 1 1/2 c. flour - 210 g.
- 2 eggs
- 1 c. brown sugar - 260 g.
- 2 T. flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. vanilla
- 1 c. chopped pecans - 104 g.
