Spicy Chicken Filet Sandwich

Preheat 6-8 c. oil in deep fryer to 350 Combine pepper sauce & water in shallow bowl
- 1/2 c. Franks Original Red Hot Pepper Sauce
- 2/3 c. water
- 1 c. flour
- 2 1/2 t. salt
- 2 t. cayenne pepper
- 1 t. course ground pepper
- 1 t. onion powder
- 1/2 t. paprika
- 1/8 t garlic powder
- 4 chicken fillets & buns
- Mayo, french dressing, lettuce (tomato if desired)

- Filling:
- 1 3/4 c. oatmeal
- 1 3/4 c. flour
- 1 c. brown sugar
- 1 tsp. soda
- 1 c. shortening (1/2 butter)
- 4 egg yolks, beaten
- 1 1/2 c. sugar
- 3 T. cornstarch
- 2 c. sour cream
- 2 c. raisins

In a large bowl, combine 1-1/2 cups flour, sugar, yeast, lemon peel and salt
- ICING:
- 2-1/2 to 3 cups King Arthur Unbleached All-Purpose Flour
- 1/3 cup sugar
- 1 tablespoon active dry yeast
- 1/2 teaspoon grated lemon peel
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 1/3 cup butter, cubed
- 1/4 cup water
- 2 eggs
- 3/4 cup lemon curd
- 1 egg, lightly beaten
- 1/2 cup chopped walnuts, optional
- 1/2 cup confectioners' sugar
- 1 teaspoon water
- 1 teaspoon lemon juice
- 1/4 teaspoon grated lemon peel

- 4 center-cut bone-in pork loin chops, 1 inch thick (about 2 lb), trimmed of fat

- 2 tablespoons cider vinegar
- 1 teaspoon ground ginger

- 2 medium baking apples, peeled, chopped (2 cups)
