ix sugar, yeast and water together, stir and allow yeast to bubble
- For the sponge:
- 2 tsp active dry yeast, 1 tsp sugar
- 1-1/2 C. warm water
- 4 C. bread flour (high gluten flour).
- Mix the water, sugar and yeast together, stir well. Let set until you see yeast bubbles. Add the flour to make a soft spongy dough. Cover the dough and Place it in a warm place until it doubles in size.
- For the dough:
- 1 tsb active dry yeast
- 1 tsb sugar, 1/2 C. warm water
- 1 TBSB kosher salt
- 5 eggs
- 1 TBSB honey
- 3 C. + 1C. bread flour.
Cappuccino Fudge

Line an 8” square baking pan with aluminum foil; set aside
- 1 (7 oz.) jar marshmallow cream
- 1/2 c. sugar
- 2/3 c. heavy whipping cream
- 1/4 c. margarine/butter
- 1 t. instant coffee powder
- 1/4 t. cinnamon
- 1/4 t. salt
- 1 (12 oz.) bag semi-sweet chocolate chips

- 2/3 cup sugar
- 2 teaspoons vanilla

- 1 (10-ounce) package (2 cups) crème de menthe baking chips*

Mushroom and Broccoli Quinoa is a great side dish
- 2 tablespoon butter
- 2 cups chopped broccoli, cut into 2-inch pieces
- 2 cups chopped cremini or button mushrooms
- 1/2 cup diced white onion
- 1 1/2 tablespoon minced garlic
- 1 cup quinoa, rinsed and drained
- 2 cups vegetable or chicken stock
- pinch of ground nutmeg
- 1/4 cups fresh parsley
- 1/3 cup freshly grated Parmesan cheese
- salt and pepper to taste
Turkey-Bacon Turnovers with Tomato-Avocado Salad

Preheat oven to 400°; line a baking sheet with parchment
- Prepare, Arrange, and Bake:
- 8 oz deli-style smoked turkey, thinly sliced
- 4 slices Swiss or Cheddar cheese
- 4 strips bacon, cooked
- 1 sheet puff pastry, thawed
- 4 tsp Dijon mustard, divided
- 1 egg blended with 1 t. water
- Kosher salt
- Stir:
- 1/4 cup white wine vinegar
- 2 tsp sugar
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, peeled, pitted, sliced
- 1/4 cup scallions, sliced
