Chocolate Kahlua Cupcakes

To make the cupcakes, preheat the oven to 350˚ F
- Cupcakes:
- 3/4 cup unsweetened cocoa powder
- 1 tbsp. instant espresso powder
- 1 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 1/2 tsp. baking soda
- 3/4 tsp. baking powder
- 3/4 tsp. salt
- 2 large eggs
- 3/4 cup warm water
- 3/4 cup buttermilk
- 3 tbsp. vegetable oil
- 1 tsp. vanilla extract
- To Brush:
- Kahlua liqueur
- Frosting:
- 12 tbsp. unsalted butter, at room temperature
- 4 cups confectioners’ sugar, sifted
- 7-8 tbsp. Kahlua liqueur
- 2 tbsp. heavy cream
Herb Compound Butter

Mix herbs and salt into butter; form into log, wrap and refrigerate
- 1 tablespoon each minced fresh parsley, thyme and rosemary
- 1/8 teaspoon salt
- 1/2 pound softened unsalted butter
Rocky Road Brownies

Heat oven to 350°F (325°F for dark or nonstick pan)
- 1 box (1 lb 2.4 oz) brownie mix
- Water, vegetable oil and egg called for on brownie mix box
- 1 1/3 cups (8 oz) semisweet chocolate chips
- 1 to 1 1/3 cups miniature marshmallows
- 3/4 cup chopped peanuts
- I only had white chocolate chips so I used those, plus put the marshmallows on top and put back into the oven to toast it up a bit :).
Orange Coconut Creams

1. In a small saucepan, combine milk and butter
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup butter, cubed
- 1 package (2 pounds) confectioners' sugar
- 1 cup flaked coconut
- 1-1/2 teaspoons orange extract
- 2 cups (12 ounces) semisweet chocolate
- 8 ounces German sweet chocolate, chopped
- 2 tablespoons shortening
White Almond Sour Cream Cake (WASC)

- 2 boxes white cake mix
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 1/2 tsp salt
- 2 2/3 cups water
- 1/4 cup vegetable oil (= 4 Tbsp)
- 2 tsp real vanilla
- 2 tsp almond extract
- 2 cups (16 oz) sour cream
- 8 large egg whites

1. Heat oven to 400ºF. In small bowl, mix red sugar and 1 1/2 teaspoons of the cinnamon; set aside
- 2 * 2 tablespoons Betty Crocker® Decors red sugar
- 1 * 1 tablespoon ground cinnamon
- 2 * 2 tablespoons Betty Crocker® Decors green sugar
- 1 1/2 * 1 1/2 cups sugar
- 1/2 * 1/2 cup shortening
- 1/2 * 1/2 cup butter or margarine, softened
- 2 * 2 eggs
- 2 3/4 * 2 3/4 cups Gold Medal® all-purpose flour
- 2 * 2 teaspoons cream of tartar
- 1 * 1 teaspoon baking soda
- 1/4 * 1/4 teaspoon salt
Cheese Sauce For Cheese Fries And Nachos

Add cheese and cornstarch to large bowl
- 8 ounces extra sharp cheddar cheese (or a mix of cheddar and pepper Jack—see note) -- grated on large holes of a box grater
- 1 tablespoon corn starch
- 1 can evaporated milk -- (12-ounce)
- 2 teaspoons Franks Red Hot or other hot sauce
Broccolini Frittttata

In ovenproof skillet, cook shallot and broccolini in EVOO, 5 minutes
- 2/3 cup sliced shallot
- 2 cups broccoli florets
- 2 tablespoons EVOO
- 8 eggs, beaten
- 1 1/3 cups grated parmesan
- 8 basil leaves

- 9 oz. good quality bittersweet chocolate, coarsely chopped
- 2 cups Dutch process cocoa powder
- 8 oz very warm milk
