Lemon Tea Cookies

For the cookies: Cream butter, lemon zest and juice until fluffy

- 3/4 cup (1 1/2 sticks) unsalted butter
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 1/4 cup flour
- 1/2 cup cornstarch
- 1/3 cup confectioners’ sugar
- For the frosting:
- 3/4 cup confectioners’ sugar, sifted
- 1/4 cup unsalted cold butter, cut into 1/2 inch cubes
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice

- 1/2 tsp almond extract
- 1 egg, separated
- 2 pkgs (8 oz each) refrigerated crescent rolls
- 6 Tbsp strawberry, raspberry or your choice of preserves
- Streusel:
- 1/3 cup all-purpose flour
- 2 Tbsp sugar
- 2 Tbsp almonds, chopped
