Grilled Ginger Chicken and Peaches

- Dressing :
- 1/2 cup olive oil
- 2 Tablespoons sherry vinegar
- ( or 1 Tablespoon each white wine vinegar
- and sherry )
- 2 teaspoons grated ginger
- ( or 1 teaspoon of ginger powder )
- 1 teaspoon crumbled dried rosemary
- 1/4 teaspoon each cayenne & sea salt
- 2 large boneless skinless chicken breasts
- 2 peaches
- salad greens
- Garnish : 1/4 cup grated feta cheese
Asian Slaw

Combine the vegetables in a large bowl
- 5 cups finely chopped Napa cabbage
- 1 yellow bell pepper, cut into thin strips
- 2 peeled and shredded carrots
- 1 bag frozen snap pea pods, cooked
- 3 small green onions, thinly sliced
- 3 Tablespoons rice or salad vinegar
- 2 Tablespoons canola oil
- 1 Tablespoon sesame oil
- 1 Tablespoon soy sauce
- 1/4 teaspoon each sea salt and black pepper
Mashed Potatoes and Cauliflower

Norman Style Chicken

- a Dutch Oven or heavy pan
- 3 Tablespoons brandy
- 2 teaspoons brown sugar
- 2 Granny Smith apples
- 1 yellow onion
- 6-8 chicken thighs ( 3 pounds )
- 2 teaspoons olive oil
- a scant handful of sea salt
- and of thyme
Huku ne Dovi

This chicken and " ground nut " or peanut stew is a national dish of Zimbabwe
- 2-4 Tablespoons peanut oil
- 2-3 pound chicken,
- cut into serving pieces
- 2 finely chopped yellow onions
- 1 cup peanut butter
- 1 cup + 3 cups water
- 16 ounce can stewed whole tomatoes
- salt & pepper to taste
- 1/2 teaspoon cayenne pepper
- 2 cups finely chopped cabbage
- 3 coarsely chopped carrots
- 3 sweet potatoes,
- peeled and coarsley chopped
- 2 peeled and coarsely chopped turnips

Hot Feta Hummus

- 1 bowl of hummus
- 2 teaspoons chili powder
- 3 chopped green onions
- 2/3 cup crumbled feta cheese
- 1/2 cup chopped cilantro

Stir-fry sausage balls in wok or heavy skillet at medium-high heat
- 1/2 pound mild breakfast sausage,
- hand-rolled into 3/4 inch balls
- 1/2 pound pork loin, cut into 1/2 inch cubes
- 2 Tablespoons reserved drippings from above meats
- 1 medium sized chopped yellow onion
- 1 clove minced garlic
- 1 carrot, peeled and chopped
- 1 celery stalk, chopped
- 7 ounce can tomatoes, chopped and un-drained
- ( or about 1 cup fresh chopped tomatoes )
- 1/2 cup dry white wine ( or apple juice )
- 15 ounce drained can ( each ) navy and garbanzo beans

- 2 teaspoons beef bouillon ( or 1 cube )
- 1 teaspoon thyme
- 1 bay leaf ( optional )
Shrimp, Cherry Tomatoes & Feta Cheese with Linguine

Bring 4 quarts of water to boil in a large pot
- 2 teaspoons olive oil
- 3/4 pound small de-veined tail-less shrimp
- 1 clove minced garlic
- 1 Tablespoon chopped fresh oregano,
- or 1 teaspoon dried oregano
- 1/4 cup dry white wine, or chicken broth
- 12 ounce bag of cherry tomatoes on-the-vine
- 3 Tablespoons chopped Italian parsley
- 2 Tablespoons crumbled feta cheese
- 1 pound linguine
Panko Parmesan Chicken

- 1 gallon sized ziploc bag
- 3/4 cup Panko bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 3 Tablespoons soy sauce
