- CREAM LAYER:
- Pastry for single-crust pie (9 inches)
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 2 cups 2% milk
- 3 egg yolks, lightly beaten
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- PINEAPPLE LAYER:
- 1/3 cup sugar
- 2 tablespoons cornstarch
- 1/4 cup water
- 1 can (20 ounces) crushed pineapple, undrained
- 2 tablespoons butter
- MERINGUE:
- 3 egg whites
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- 6 tablespoons sugar

- 4 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 12 tablespoons cold unsalted butter, cut into small pieces

In a large saucepan,heat the olive oil over medium heat
- 1 lb (about 3) chicken breasts, sliced or chopped into bite size pieces
- 2 garlic cloves, minced
- 1 cup (one medium) onion, chopped
- 1 TBSP olive oil
- 2 cans pinto beans, rinsed
- 2 cups chicken broth
- 1 cup restaurant style salsa
- 1 cup frozen corn
- 1 tsp kosher salt
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp fresh ground pepper
- 1/4 tsp cayenne pepper
- 1 cup sour cream
- 1/2 cup heavy cream
