Libby's Pumpkin Pie

Preheat oven to 425 degrees F
- 1 (9 inch) unbaked deep dish pie crust
- 3/4 cup white sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt

- 1 (15 ounce) can LIBBY'S® 100% Pure Pumpkin
- 1 (12 fluid ounce) can NESTLE® CARNATION® Evaporated Milk

Baked Lasagna with Meat Sauce

- 1 lb box of lasagna noodles (18 noodles)
- 1 lb ground beef
- 1 jar (32 oz) spaghetti sauce
- 1 lb cottage cheese (24 oz)
- 1/2 lb Mozzarella Cheese
- 1/2 cup grated Parmesan Cheese
Pork Chops in Cream Sauce - Braciole alla Panna

1. Into a saute pan add butter and oil and heat over medium heat until butter has melted
- 2 tablespoons unsalted butter
- 1 tablespoon extra virgin olive oil
- 4 boneless pork chops
- salt/pepper
- 1 cup Marsala wine
- 1 cup heavy whipping cream
- 1 teaspoon all purpose flour
- 8 ounces button mushrooms – sliced
- I didn't have Marsala wine so I replaced it with 100% white grape juice and used fat free 1/2 & 1/2 instead of heavy cream.
Corn Casserole

Combine all ingredients. Place in a 9x13 dish that has been sprayed with cooking spray
- 1 can cream corn
- 1 can corn, with juice
- 1 stick butter
- 2 eggs
- 8 oz sour cream
- 1 pkg jiffy corn mix
CrockPot Chicken Tortilla Soup

Put chopped onion, cans of beans, rotel, corn, chicken broth, water, and spices in CrockPot and stir to mix
- 2 chicken boneless skinless chicken breasts
- 2 cans Ro-Tel (I like the lime & cilantro, but the regular is fine)
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can corn
- 1 onion, chopped
- 2 cans low-sodium chicken broth
- 1-2 cups of water
- 1 Tbsp garlic powder*
- 1 Tbsp chile powder*
- 1 Tbsp ground cumin*
- 1 Tbsp dried cilantro*
- tortilla chips
- sour cream
- shredded cheddar or Mexican blend cheese
- Instead of these spices, you could include a packet of Taco seasoning if you prefer.*
