Rolled Fruit Leather

1. Peel and dice the fruit, removing all seeds (unless you’re using berries)
- 4 cups fruit (apples, pears, peaches, apricots)
- 1/2 cup water
- 1 tablespoon honey or agave syrup (optional)
- 1 teaspoon lemon juice
Rosemary Dinner Rolls

Spray a small iron skillet with cooking spray (or coat with olive oil)
- Frozen, Unbaked Dinner Rolls
- Melted Butter
- Fresh Rosemary, Coarsely Chopped
- Coarse Sea Salt
Crispy Roasted Brussels Sprouts

Preheat oven to 400 degrees F
- 1 lb brussels sprouts, trimmed and sliced thinly
- 2 T heat-safe oil (like grapeseed or coconut)
- 2-3 cloves garlic, minced
- salt and pepper, to taste
- juice from half of a lemon
- 1/4 cup freshly shredded Parmesan or Pecorino-Romano cheese
Cheesy Artichoke French Breads

Preheat oven to 400 degrees
- 2 whole grain french baguettes (mine were about 9 inches long)
- 1/4 cup olive oil
- 1 14-ounce can of artichokes in water or brine, drained and chopped (about 10-12 hearts)
- 4 garlic cloves, minced
- 1 1/2 cups freshly grated parmesan cheese
- 1/3 cup grated mozzarella cheese
- 1/4 cup seasoned panko bread crumbs
- fresh parsley for garnish
Giada's Sugar Cookie Frosting

Whip up butter for a minute and add sugar slowly
- 1 lb confectioner's sugar
- 1 stick butter (room temp)
- 1 tsp vanilla
- 1/4 cup water
Steak Gorgonzola Alfredo

1 MARINATED STEAK PREPARATION; 2 Cut beef into 1/2" cubes and set aside
- 1 (2 1/2 lb) boneless beef top sirloin steaks
- 1 1/2 cups Italian dressing (I used Newman's Own Lighten Up Italian)
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon fresh lemon juice (optional)
- 1 lb uncooked pasta, cooked according to pkg directions
- 4 cups chopped spinach
- 2 cups alfredo sauce
- 1/2 cup chopped green onion
- 3 tablespoons gorgonzola, crumbled
- 2 tablespoons gorgonzola (for sprinkling on top of finished dish)
- 2 tablespoons chopped sun-dried tomatoes
- 2 tablespoons balsamic vinegar, glaze (I used the bottled glaze from igourmet.com)
- chopped fresh parsley leaves, for sprinkling
Two Timin’ Pasta

Cook pasta according to directions and drain
- 1 box penne pasta
- 1 (15 oz.) jar Alfredo sauce
- 1 (24oz.) jar Marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup shredded parmesan cheese
Sweet and Spicy Pumpkin Seeds

Preheat the oven to 250 degrees F (120 degrees C)
- 1 cup raw pumpkin seeds, rinsed and dried
- 6 tablespoons white sugar, divided
- 1/4 teaspoon salt
- 1/2 teaspoon pumpkin pie spice
- 1 tablespoon vegetable oil
Baked Corn

- 1 bag frozen sweet corn
- salt and pepper, to taste
- 1 stick butter
Light Brioche Burger Buns

In the bowl of a stand mixer fitted with the paddle attachment, combine the milk, water, yeast, sugar, salt and egg
- For topping:
- 3 tbsp. warm milk
- 1 cup warm water
- 2 tsp. instant yeast
- 2 1/2 tbsp. sugar
- 1 1/2 tsp. salt
- 1 large egg
- 3 cups bread flour
- 1/3 cup all-purpose flour
- 2 1/2 tbsp. unsalted butter, softened
- 1 large egg beaten with 1 tbsp. water, for egg wash
- Sesame seeds
