Pesto Chicken Penne Casserole

Preheat an oven to 350 degrees F (175 degrees C)
- 1/2 cup seasoned bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 (16 ounce) box penne pasta
- 6 cups cubed cooked chicken
- 4 cups shredded Italian cheese blend
- 3 cups fresh baby spinach
- 1 (15 ounce) can crushed tomatoes
- 1 (15 ounce) jar Alfredo sauce
- 1 (15 ounce) jar pesto sauce
- 1 1/2 cups milk
Crockpot Corn on the Cob

Warm the corn. Set a slow cooker to high for 20 minutes to preheat
- To garnish:
- 10 to 12 cobs fresh corn, husked and silks removed
- Crushed ice
- 2 cups mayonnaise
- 2 cups Cotija cheese, finely crumbled
- Cayenne pepper, to taste
- 10 to 12 lime wedges

- 1 can (14 oz.) artichoke hearts, drained, chopped
- 1 pkg. (8 oz.) shredded mozzarella cheese
- 1/2 cup grated Parmesan Cheese
- 1/2 cup sun-dried tomatoes, chopped and drained
- 1-1/2 pkg. low fat cream cheese
- 1 cup half and half
- 1 tsp. minced garlic
- 1/4 cup fresh basil, chopped
- 12 lasagna noodles, cooked
- 12 slices whole milk mozzarella
BBQ Beef Brisket

Mix liquid smoke celery, onion, and garlic salt in a bowl
- 3 oz (85ml). bottle liquid smoke
- 5 to 6 lb beef brisket
- 1 litre bottle BBQ sauce
- 1 tsp Celery salt
- 1 tsp Onion salt
- 1 tsp Garlic salt
- Salt and pepper to taste
- Meat tenderizer (optional)
- Worcestershire sauce
- Cornflour to thicken gravy if desired.
Hot Fudge Sauce

.Melt the chocolate and butter in a small saucepan over medium-low heat
- 2 ounces unsweetened chocolate
- 1/2 cup unsalted butter
- 2 cups superfine sugar
- 1/2 cup evaporated milk
- Pinch of coarse salt
Artichokes Stuffed

Cut pointy tops off artichokes with a knife and then open them with a knife as far as you can
- 4 artichokes
- 1 cup bread crumbs
- 1/2 cup grated Romano or Parmesan cheese
- 1 egg
- 1/4 cup raisins
- 1/4 cup olive oil (more if needed for consistency)
- 1/2 cup water
- A pinch of salt and pepper (about 1/4 teaspoon each)
Bread and Butter Pudding with Hot Whisky Sauce

To make pudding: In a small bowl, combine raisins and whisky and let soak for 1 hour
- Pudding:
- 125 ml (1/2 cup) raisins
- 125 ml (1/2 cup) Irish whisky
- 5 large eggs
- 500 ml (2 cups) heavy (whipping) cream
- 250 ml (1 cup) sugar
- 2 ml (1/2 tsp) ground cinnamon
- 1 ml ( 1/4 tsp) ground nutmeg
- 5 ml (1 tsp) vanilla extract
- 250 g (8 oz) slices firm white bread (8 to 9), crust left on
- 60 ml (4 tbsp) unsalted butter at room temperature
- Hot Whisky Sauce:
- 125 ml (1/2 cup) unsalted butter, cut into pieces
- 250 ml (1 cup) sugar
- 90 ml (6 tbsp) heavy (whipping) cream
- 60 ml ( 1/4 cup) Irish whisky

- 2-3 Chicken Breasts
- 2 Cans Cream of Mushroom Soup
- 2 C Milk
- Salt & Pepper to Taste
- 3 C Rice, Cooked
Sauce

In a saucepan, bring the orange juice, sugar and soy sauce to a boil
- 1 1/2 cup orange juice
- 3 tablespoon light brown sugar
- 2 tablespoon soy sauce
- 2 tablespoon orange zest
