In a Dutch oven, heat olive oil over high heat until smoking
- 3 tablespoons Extra-Virgin Olive Oil plus extra for casserole dish
- 1 pound Italian Cook Ham (such as parmacotta - cut into 1/2 inch cubes)
- Salt and Pepper to taste
- 1 Carrot (1/4 inch dice)
- 1 Onion (1/4 inch dice)
- 1 Celery Stalk
- 1 cup Dry Red Wine
- 1 1/2 cups Basic Tomato Sauce
- 1 1/2 pounds Ziti
- 1 pound Fresh Ricotta
- 8 ounces Caciotta or Hard Provolone (cut into small dice)
- 1/2 cup Parmigiano-Reggiano (grated plus extra for garnish)

Preheat oven to 425 degrees
- 1 can Pillsbury refrigerated pizza dough
- 2 Roma tomatoes, halved and sliced
- 4 ounces mozzarella cheese, cubed
- 1/2 cup fresh basil, chopped
- Your favorite pizza/spaghetti sauce for dipping
Carnitas Empanadas with Avocado Crema

Heat the water and butter together over low heat in a medium saucepan until the butter is melted
- 1 cup water
- 3/4 cup (1 1/2 sticks) butter
- 2 3/4 cups all-purpose flour
- 2 teaspoons salt
- pinch paprika
- 1 1/2 to 2 cups leftover carnitas
- 1 medium ripe avocado
- 2 tablespoons sour cream
- 1 teaspoon lime juice

- 2 lbs medium red potatoes scrubbed and quartered
- 3 medium carrots peeled and quartered

- 2 cup shredded coconut

- 1 head of cauliflower
- Salt, to taste
- Pepper, to taste
- 1/4 cup sour cream (or Greek yogurt)

- 3 cups Water
- 1 tsp Salt
- 1 1/2 lbs Russet Potatoes, peeled and cut into large chunks
- 3 Tbsp Heavy Cream
- 3 Tbsp Unsalted Butter
- 1 1/2 cups Cheddar Cheese, Shredded
- Salt & Pepper, to taste

Preheat oven to 350°F. Spray a 9x13x2 baking pan with cooking spray
- 1 (15.25 ounce) box super moist chocolate fudge cake mix (dry)
- 12 ounces Dr. Pepper Cherry (room temperature)
- 1 (18 ounce) jar maraschino cherries, divided
- 2 (1 cup) sticks salted butter (room temperature)
- 7 cups powdered sugar

1. In shallow dish, combine flour, salt, pepper and oregano; stir to blend
- 1/4 cup cake flour (Wondra)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon oregano
- 4 tablespoons oil
- 4 tablespoons butter
- 4 chicken half breasts -
- boneless, skinless
BLT Pasta Salad

- 1 box bow-tie pasta
- 1 lb. thick-cut bacon
- 1/3 cup creamy ranch dressing
- 1 cup zesty Italian dressing
- 10 leaves romaine lettuce, chopped
- 2 large tomatoes, diced
- 1 small red onion, diced
- Salt and pepper, to taste
