EASY ROAST CHICKEN

Preheat oven to 425 In a large baking dish, combine marinade and toss with chicken
- 1 whole free-range or corn fed chicken, broken down into 8 pieces
- (or 8 of your favorite chicken pieces, skin on and bone- in preferable)
- 2 tbsp soy sauce
- 1 tbsp light brown sugar
- 2 tbsp red wine vinegar
- 3 tbsp olive oil
- 4 shallots, chopped
- 2 cloves of garlic, minced
- Handful of fresh parsley
- Salt and Pepper
Baked Spaghetti

1. Cook spaghetti according to package directions
- 1 (16 ounce) package spaghetti
- 1 pound ground beef
- 1 medium onion, chopped
- 1 (26 ounce) jar meatless spaghetti sauce
- 1/2 teaspoon seasoned salt
- 2 eggs
- 1/3 cup grated Parmesan cheese
- 5 tablespoons butter, melted
- 2 cups small curd cottage cheese
- 4 cups shredded mozzarella cheese
Dorito Delight

Crush Doritos coarsely and place in bottom of a 13x9x3 pan
- 1 lb. lean hamburger meat
- 1/2 C. chopped onion
- 1 jalapeno pepper, chopped
- 1 can cream of mushroom soup
- 1 can nacho cheese soup
- 1 can evaporated milk
- 1 small bag Doritos (not snack size)
- 8 oz. grated cheddar cheese
Caramel Apple Cream Cheese

First, pour the caramel squares and cream into a small sauce pan, and heat until melted
- 8 ounces cream cheese
- 5.5 oz Caramel squares
- 1/4 cup Cream
- Toffee bits
Baked Chicken Dinner

Preheat oven to 425 degrees
- Gravy:
- 1 whole chicken, 4 lbs, washed and patted dry
- 2 cloves garlic
- Salt
- Pepper
- Fresh herbs: tarragon, rosemary or thyme
- 6 tablespoons butter
- 1 onion, peeled and halved
- 3 parsnips, peeled and chopped into 3 inch pieces
- 3 carrots, peeled and chopped into 3 inch pieces
- 3 potatoes, quartered
- 2 tablespoons olive oil
- Splash white wine
- 1 cup chicken stock
- Chopped fresh herbs
- Salt
- Pepper
Creamy Baked Fettuccine with Asiago and Thyme

Preheat the oven to 375 degrees F
- 1 pound fettuccine pasta
- 2 cups grated Asiago cheese, plus 1/4 cup
- 2 (8-ounce) containers creme fraiche
- 1 cup grated Parmesan
- 1 1/2 tablespoons fresh chopped thyme leaves
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper

Heat the oven to 400 degrees
- 1/4 C. butter, melted
- 2 Tb. freshly grated Parmesan
- 3/4 tsp. garlic powder
- 1/2 tsp. dried oregano
- 1/2 tsp. dried parsley flakes
- 1/4 tsp. salt
- 1 (16 oz.) tube refrigerated buttermilk biscuits
Crock Pot Angel Chicken Crockpot

- 6 frozen or fresh boneless skinless chicken breasts
- 1/4 cup of butter
- 1 Italian dressing mix packet
- 1 can of cream of chicken
- 8 oz of chive and onion cream cheese
- 1/2 cup dry white wine
- 1 box of angel hair pasta
Sweet and Salty White Chocolate Popcorn

- 5 cups plain popcorn, popped
- 1 (11 oz) bag white chocolate chips
- 1 tablespoon shortening
- 1 cup M & M's chocolate candies
- 1 cup mini pretzels
- 1/2 cup salted peanuts
Jambalaya Recipe (Creole)

Heat 1 tablespoon of oil in a large pot or Dutch oven over medium heat
- 3 tablespoons cooking oil, divided
- 2 tablespoons Slap Ya Mama/Cajun seasoning, (adjust to suit your tastes/heat preference)
- 10 ounces andouille sausage, sliced into rounds
- 1 pound boneless skinless chicken breasts or thighs, cut into 1 inch pieces
- 1 onion diced
- 1 small green bell pepper seeded and diced
- 1 small red bell pepper, seeded and diced
- 2 stalks/ribs celery, chopped
- 4 cloves garlic, minced
- 14 ounces can crushed tomatoes
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon each dried thyme and dried oregano
- 1/2 teaspoon red pepper flakes (or 1/4 teaspoon Cayenne powder)
- 1/2 teaspoon hot pepper sauce
- 2 teaspoons Worcestershire sauce
- 1 cup thinly sliced okra (or 1 teaspoon file powder)
- 1 1/2 cups uncooked white rice (short grain or long grain)
- 3 cups low sodium chicken broth
- 1 pound raw shrimp/prawns tails on or off, peeled and deveined
- Sliced green onions and chopped parsley, to garnish
