Tuna Cheesy Casserole

Bring large pot of water to boil
- 1/2 pound short cut pasta, such as Barilla Plus Farfalle
- 1 head cauliflower
- 2 tablespoons olive oil
- 1 cup diced onion
- 1 jar prepared alfredo sauce
- 2/3 cup milk
- 2 1/2 cups grated cheddar cheese, divided
- 2 cans water packed tuna
- salt & pepper, to taste
- 1 cup frozen peas
Salad Blue Cheese Pecan

To Make the Cinnamon Pecans: Combine the pecans, ground cinnamon, melted butter and light brown sugar in a bowl
- For the Cinnamon Pecans
- 1/2 c. Whole or Halved Pecans
- 1/2 tsp. Ground Cinnamon
- 1 tbsp. Light Brown Sugar
- 1 tbsp. Butter, melted
- For the Dressing
- 1/4 c. Extra Virgin Olive Oil
- 1/4 c. White Vinegar
- 2 tsp. Dijon Mustard
- 2 tbsp. Sour Cream
- 2 oz. Crumbled Bleu Cheese
- For the Salad
- 2- 7 (ounce) Bags Premixed Salad Greens (lettuce, cabbage, shredded carrots), rinsed and drained
- 2 Scallions, chopped
- 2 oz. Crumbled Bleu Cheese
Cake Batter Cheesecake

Preheat oven to 375 degrees
- 3 8oz containers of cream cheese, at room temperature(leave out for several hours
- 3 eggs, at room temperature
- 1 14 oz can sweetened condensed milk
- 1 1/2 TBSP vanilla
- 2 tsps almond extract
- 1/2 cup rainbow sprinkles
Beer Can Chicken

For the herb butter, mix together all ingredients in a large bowl until thoroughly combined
- For the Chicken:
- 1 2 1/2- to 3-pound chicken
- 1 12-ounce can pale ale, preferably Porkslap, at room temperature
- Kosher salt
- Freshly ground black pepper
- For the Herb Butter:
- 8 tablespoons (4 ounces) unsalted butter, softened
- 1/4 cup finely chopped fresh flat-leaf parsley
- 1/4 cup finely chopped fresh cilantro
- 2 tablespoons finely chopped fresh basil
- 2 tablespoons garlic confit
Chicken Cacciatore Crockpot

Throw it all in the crock pot
- 6 skinless chicken thighs (you could put in more without increasing the liquid)
- 1 cup chopped onion
- 4 garlic cloves
- 12 ounces sliced mushrooms
- 1 cup chopped red pepper
- 1/2 cup white wine ( I used one that was on the dry side)
- 1 jar of your favorite sauce
- 1 jar of stewed tomatoes
CRAB PASTA SALAD

Cook in boiling, salted water until al dente: 1 pkg
- 1 pkg. (12 oz.) tri-colored rotini pasta
- 1 small head broccoli, cut into bite-size pieces
- 1 small head cauliflower, cut into bite-size pieces
- 2 chopped tomatoes
- 1/2 cup chopped chives
- 12 ounces crabmeat, or imitation crabmeat
Monkey Bread

Heat milk, water & 1/2 C. butter until warm (approximately 120 degrees)
- 1 pkg. instant yeast
- 2 Tbsp. sugar
- 1/4 C. water
- 3 eggs
- 1 C. milk
- 1 Tbsp. salt
- 1 C. butter
- 4 C. flour
Crispy Roasted Parmesan Potatoes

Preheat oven to 400F. Mix Parmesan Mixture in a bowl
- Parmesan Mixture:
- 1.5 lb baby potatoes , halved (20 - 24 potatoes)
- 2 tbsp olive oil , plus more for drizzling
- 1/2 cup grated parmesan Use the grated parmesan that has a sand-like consistency sold in the refrigerated section. Shredded parmesan doesn't go as crispy.
- 1/2 tsp garlic powder (or onion powder)
- 1/2 tsp dried oregano or thyme
- 1/2 tsp paprika
- 1/4 tsp salt (I use table salt, leave out to lower sodium)
- 1/2 tsp black pepper
- Dipping Sauce (Optional):
- 3/4 cup plain yoghurt or sour cream , or a combination of both
- 1/4 cup finely chopped green onions/scallions , plus more for garnish (or chives)
Crispy Cajun Shrimp Fettucini

Cook fettuccine according to package instructions
- 8 ounces fettuccine
- 1 pound large shrimp, deshelled and deveined
- 1 tablespoon cajun seasoning
- 2 tablespoons flour
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 1/2 cup Parmesan cheese, grated
- 1 tablespoon fresh parsley, chopped
Crockpot Beef Brisket

Rub brisket with olive oil and then salt and pepper
- 3 pound piece of beef brisket
- 1/2 teaspoon freshly ground black pepper
- Olive oil
- 1/4 cup water
- 2 onions, sliced
- 2 parsnips chopped
- 1 tablespoon balsamic vinegar
- 1 bay leaf
- 1 bottle of your favorite beer
- salt to taste
