Preheat oven to 350°. Cook pasta according to package directions for al dente
- 1 package (8 ounces) uncooked spiral pasta
- 2 teaspoons olive oil, divided
- 1 pound boneless skinless chicken breasts, cut into 3/4-inch cubes
- 1/4 pound sliced fresh mushrooms
- 2 garlic cloves, minced
- 1 cans (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 3/4 cups chicken broth
- 1-1/2 cups (6 ounces) shredded fontina cheese, divided
- 2 teaspoons minced fresh oregano or 1 teaspoons dried oregano
- pepper
- 1 packages(6 ounces) fresh baby spinach, coarsely chopped
- 1 medium tomatoes, chopped
Avocado Shrimp Ceviche-Estillo Sarita

Place the shrimp and lime juice into a large bowl, and stir to coat
- 2 pounds large shrimp - peeled, deveined and chopped
- 3/4 cup fresh lime juice
- 5 roma (plum) tomatoes, diced
- 1 white onion, chopped
- 1/2 cup chopped fresh cilantro
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon hot pepper sauce
- salt and pepper to taste
- 1 avocado - peeled, pitted and diced
- 2 (4 ounce) packets saltine crackers
Apple Pie Bites

Preheat your oven to 375 degrees F
- 1/4 cup packed light brown sugar
- 1 teaspoon apple pie spice, and additional apple pie spice for sprinkling on top of crescent rolls
- 3 tablespoons butter, melted
- 1/3 cup chopped pecans
- 1 small Granny Smith apple, cored and sliced into 8 (1/2-inch) slices
- 1 (8-ounce) can Pillsbury Original crescent rolls
Shrimp Scampi

Melt the butter in a large skillet over medium heat
- 1/2 cup butter
- 4 cloves garlic, minced
- 1/2 cup minced onion
- 1 tablespoon chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 dash Worcestershire sauce
- 1/4 cup lemon juice
- 1 teaspoon dry white wine
- 1 pound peeled and deveined medium

- 12 oz. prepared Whipped Topping

- 4 cups riced cauliflower - about 1 large head of cauliflower
- 4 eggs
- 2 cups mozzarella cheese
- 3 teaspoons oregano
- 4 cloves garlic minced
- Salt and pepper to taste
- 1 cup mozzarella cheese, or more for topping

Preheat oven to 350 degrees Flatten chicken to 1/4 inch thickness
- 4 boneless, skinless chicken breasts
- 8 ounces cream cheese, softened
- 1 tablespoon garlic powder
- 1 tablespoon Italian seasoning
- 1 tablespoon chopped green onion
- 1 tablespoon pepper
- 1/2 cup flour
- 1 egg, beaten (for egg wash)
- 1 cup Corn Flakes, crushed
