Cook pasta. Rinse and cool down
- Cantonese Stir Fry Sauce:
- 3 tsp minced garlic
- 3 tsp granulated sugar
- 2 tbsp white vinegar
- 1 1/2 tsp red chile flakes
- 2 tbsp canola oil
- 1 pound fresh Chinese noodle or vermicelli
- 1/2 tsp sesame oil
- 4 ounces Cantonese stir fry sauce (see recipe below)
- 1 Japanese cucumber or English cucumber
- 2 tbsp chopped cilantro
- 3/4 cup water
- 1 tbsp chicken base powder (no MSG)
- 1 tbsp granulated sugar
- 2 tbsp shaohsing wine or sherry
- 1 tbsp oyster sauce
- 1/2 tsp salt
- 1 tsp cornstarch

1.Spread each tortilla with one-third of the cheese
- 3 (8-inch) tortillas
- 1 (5.2-ounce) carton Boursin cheese (garlic/herb cheese) or cream cheese
- 12 large fresh basil leaves
- 1/2 of a 7-ounce jar roasted sweet red peppers
- 4 ounces shaved deli roast beef, ham, or turkey
- 1 tablespoon mayonnaise
California Fiesta Chicken and Rice

In a large skillet, heat oil over medium-high heat; add chicken and brown 3 to 5 minutes or until light golden
- 1 tablespoon vegetable oil
- 2 pounds chicken breasts, skinned, boned, and cut into 1-inch cubes
- 1 (14-1/2 ounce) can chicken broth
- 1 (15 ounce) can tomato sauce
- 1 (17 ounce) can whole-kernel corn, drained
- 1 (about 1.25 ounce) package chili seasoning mix
- 1 (4 ounce) can chopped green chilies, drained
- 2 cups instant rice, uncooked

- 5 egg yolks
- 2 cans (14-ounce) sweetened condensed milk
- 1 cup fresh lime juice
- Zest of 1/2 lime

- 10 graham crackers, crushed
- 1/4 cup sugar

Poke Cake Blueberry Cheesecake

Preheat oven to 350°F, spray 9 x 13 inch baking dish with cooking spray and set aside
- For the cake
- 1 box white or vanilla cake mix (plus ingredients on the box)
- For blueberry cheesecake filling
- 1 (14oz.) can Sweetened condensed milk
- 1 cup fresh blueberries (freeze them overnight so you can crush them in a food processor)
- 1 cup whipping cream
- 8 oz. cream cheese softened
- 2 tablespoon fresh lemon juice
- For topping
- 2 cups whipped topping (Cool Whip)
- 2 cups fresh blueberries
Penne Rosa with Parmesan Crusted Chicken

Prepare penne pasta per package instructions
- 2 chicken breasts
- 1/2 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 3 tbsp olive oil, divided
- 24oz jar of marinara sauce
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 1/4 tsp + crushed red pepper flakes (adjust depending on how spicy you like it)
- 1/2 cup heavy cream
- 4oz can sliced mushrooms, drained (optional)
- 3 small tomatoes, diced
- 2 cups baby spinach
- 16 oz penne pasta
- grated Parmesan cheese for garnish
Roasted Rosemary Potatoes

Preheat oven to 425F. In an 8-inch baking pan, pour half the butter, covering the entire bottom
- 2 1/2 tblsp unsalted butter, melted
- 2 baking potatoes, scrubbed and cut into 1/4-inch slices
- coarse sea salt
- 1/2 tsp crumbled dried rosemary
- freshly ground black pepper
Swiss Fondue

Toss the cheese with the flour in a bowl
- 3 and 1/2 cups (14 oz.) shredded Swiss cheese
- 2 tbsp. all-purpose flour
- 1 cup white wine
- 2 tbsp. fresh lemon juice
- 2 tsp. finely chopped garlic
- 1 oz. cherry-flavored liqueur (Kirschwasser recommended)
- 1/2 tsp. freshly ground pepper
- Dash of grated nutmeg

Pot Roast

Preheat oven to 300°F. Season all sides of roast with salt and pepper
- 1 4-pound chuck roast,
- 1/4 cup flour
- 2 tablespoons canola oil
- 2 onions, peeled and quartered
- 4 large carrots, split lengthwise and cut into 1 1/2-inch pieces
- 2 leeks, cleaned and sliced into half-moons
- 2 cups sliced white button mushrooms
- 2 whole peeled garlic cloves
- 1 cup red wine
- 1 quart reduced-sodium beef broth
- 2 tablespoons tomato paste
