- 1 cup canned pumpkin
- 1 cup granulated Splenda or equivalent liquid Splenda
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1/2 teaspoon pumpkin pie spice or 1 teaspoon cinnamon
- Pinch to 1/8 teaspoon salt
- 5 eggs
- 6 ounces almond flour, about 1 1/2 cups

- 2 Tbsp olive oil
- 1 onion, finely chopped
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 2 garlic cloves, finely chopped
- 1/2 lb ground beef
- 6 oz Italian sausage, skinned
- 1 cup red wine
- 18 oz can crushed tomatoes, chopped (ground)
- 1 tsp fresh rosemary, chopped (1/4 tsp dry)
- 1 tsp fresh sage, chopped (1/4 tsp dry)
- Salt to taste
- Pepper to taste
- 2 lbs Tortelloni
- Parmesan cheese, freshly grated

Preheat the oven to 350 degrees F
- 3 large boneless, skinless chicken breasts, cut into 3-inch pieces
- 1/4 cup extra virgin olive oil
- 5 cloves garlic, minced
- 3 tablespoons shredded fresh basil
- 1 teaspoon Italian seasoning
- salt and pepper to taste
- 24 ounces pasta sauce, jarred or homemade
- 1 (8-ounce) bag of shredded mozzarella cheese
- 1 (5-ounce) bag garlic croutons, crushed
- 1 cup shredded Parmesan cheese

- 2 cups baby bok choy washed and sliced
- 1 red bell pepper seeded, thinly sliced
- ½ cup matchstick carrots
- 2 tablespoons corn starch + 3 tablespoons cold water
- 2/3 cup low sodium chicken broth
- 3 tablespoons oyster sauce
- 2 tablespoons low sodium soy sauce can substitute with coconut aminos or tamari
- 3 teaspoons hoisin sauce
- 2 teaspoons honey
- 2 garlic cloves minced
- ½ tablespoon fresh ginger minced
- 1/2 teaspoon red chili pepper flakes optional
