Uptown Tuna Casserole

Bring a large pot of water to a boil for noodles
- 1/2 pound extra-wide egg noodles
- Salt
- 1 tablespoon EVOO - Extra Virgin Olive Oil
- 3 tablespoons butter
- 1/4 pound button mushrooms, thinly sliced
- 2 leeks, thinly sliced, washed and dried
- 3 to 4 cloves of garlic, finely chopped
- 3 tablespoons flour
- 1/2 cup dry white wine
- 1 1/2 to 2 cups whole milk orhalf n half or cream
- 1 rounded tablespoon Dijon mustard
- Black pepper
- 1/2 cup frozen baby peas, optional
- 1/4 cup fresh tarragon leaves, loosely packed, chopped
- 3 cans good quality tuna in olive oil, drained and flaked
- A 6-ounce piece of Gruyere cheese, shredded, about 1 1/2 cups
- 2 tablespoons finely chopped chives or parsley
Lighter Shrimp Pad Thai

1 Cook noodles according to package directions; drain
- 8 ounces uncooked flat rice noodles
- 2 tablespoons dark brown sugar
- 2 tablespoons low sodium soy sauce
- 1 1/2 tablespoons fish sauce
- 1 1/2 tablespoons fresh lime juice
- 1 tablespoon chili-garlic sauce
- 1 tablespoon canola oil

- 1/2 c milk
- 1 tsp lemon extract
- 1 3/4 c all-purpose or unbleached flour

Tibetan Beef and Potato Stew

1. Place potatoes and carrots in a large pot with 5 cups cold water; season with salt
- 3 lbs. yukon gold potatoes
- 1 lb. peeled carrots
- Kosher salt, to taste
- 3 tbsp. peanut oil
- 1 tbsp. minced garlic
- 1 tbsp. coarsely ground celery seed
- 3 scallions, cut into 1" pieces
- 1 lb. beef chuck, cut into 11⁄2" pieces

- 4 tbsp. unsalted butter
- 2 tsp. peeled, finely chopped fresh ginger

Preheat the oven to 400 degrees F
- 1 tablespoon unsalted butter
- 4 teaspoons olive oil
- 1 cup chopped yellow onions
- 2 carrots, peeled and chopped (about 1 cup)
- 1/4 teaspoon Essence or Creole Seasoning, recipe follows
- 1/4 teaspoon plus 1/8 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon minced garlic
- 4 ounces mushrooms, stemmed, wiped clean, and sliced
- 1/2 teaspoon chopped fresh thyme leaves
- 1 bay leaf
- 1 tablespoon all-purpose flour
- 2 teaspoons tomato paste
- 2 to 2 1/2 cups chopped or shredded roast turkey (white and/or dark meat)
- 1 1/4 cups chicken stock or canned chicken broth
- 1/2 cup green peas
- 4 cups leftover mashed potatoes or Basic Mashed Potatoes, recipe follows
- 3/4 cup grated sharp or medium Cheddar
