1. Combine oyster liquor with 1 cup water in a 2-qt
- 50 medium oysters, such as bluepoints,
- shucked (about 1 1⁄2 lbs.), with 1 cup
- of the liquor reserved
- 12 tbsp. unsalted butter
- 5 tbsp. flour
- 4 ribs celery, finely chopped
- 4 cloves garlic, finely chopped
- 1 large onion, finely chopped
- 1 ⁄2 cup finely chopped curly parsley
- 1 tbsp. kosher salt
- 1 1⁄2 tsp. freshly ground black pepper
- 1 ⁄4 tsp. cayenne pepper
- 2 cups milk
- 2 cups heavy cream

Directions In a small bowl combine horseradish, brown sugar, lemon juice and ketchup
- 2 tablespoons finely grated raw horseradish
- 1 teaspoon dark brown sugar

- 2 heads of garlic, top third cut off
- 6 tablespoons olive oil, divided
- 1 3-4-pound chicken, cut in half lengthwise, backbone removed
- 1/4 cup Za'atar (click for recipe)
- 1 1/2 teaspoons lemon zest and 3 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh rosemary
- 1 small serrano chile, seeded, minced
- 2 teaspoons dried marjoram
- Kosher salt and freshly ground black pepper

- 3 green onions, chopped

- 4 cups low-fat chicken broth
- 1/3 cup salsa
- 1/2 red pepper, chopped
- 1/2 green pepper, chopped
- 3 -4 celery ribs, chopped
- 1/3 cup fresh cilantro
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon basil
- 4 tablespoons fat free sour cream
