Pumpkin Couscous (with lamb)

1. Put lamb in bottom part of a couscoussier
- 1 1/2 lbs. lamb neck or shoulder, cut into 5 pieces
- 45 large yellow onions, peeled, then quartered
- and thinly sliced lengthwise
- 1 tbsp. salt
- 11/22 tsp. freshly ground black pepper
- 1 tsp. ground ginger
- 2 pinches pulverized saffron
- 1/2 tsp. ground turmeric
- 1 1/2 cups cooked chickpeas, skins removed
- 1/2 lb. (2 sticks) unsalted butter
- 4 cups couscous (not precooked)
- Flour
- 6 carrots, peeled, trimmed, halved lengthwise,
- and cut into 2 1/2"3"-long pieces
- 1/4 cup sugar
- 1 1/2 cup raisins
- 1 1/2 lbs. pumpkin or kabocha or butternut squash,
- trimmed, peeled, seeded and cut into 2" pieces
Apple-Ale Wassail

- 2 (12-oz.) bottles ale
- 2 cups apple cider
- 1 cup port
- 1 cup lemonade
- 3/4 cup firmly packed light brown sugar
- 1 apple, diced
- 2 whole allspice
- 2 (3-inch) cinnamon sticks
- 6 whole cloves
- 1/8 teaspoon ground cardamom
- Garnish: lemon wedges, cinnamon sticks (optional)
Cuba Kola

1. Put 2 cups of ice and the first 7 ingredients into a cocktail shaker
- 2 oz. fresh lime juice
- 11/2 oz. 151-proof Demerara rum
- 1 oz. orange juice
- 1 oz. dark Jamaican rum
- 1/2 oz. honey mixed with 1/2 oz. hot water
- 1 dash Angostura bitters
- 6 dashes Herbsaint or Pernod
- Pineapple wedge and Maraschino cherry, for garnish
Turkey a la King

In a large skillet over medium low heat, cook butter until golden brown
- 2 tablespoons butter
- 3 fresh mushrooms, sliced
- 1 tablespoon all-purpose flour
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 cup chopped cooked turkey
- 1/3 cup frozen peas, thawed
- salt and pepper to taste
Yummy Peanut Butter Bread

Place ingredients in bread machine pan in the order suggested by the manufacturer
- Yield 1 -1 1/2 pound loaf

- 3 large potatoes, peeled and thinly sliced
- 1 medium onion, chopped
- 3 tablespoons grated Parmesan cheese
- 1 tablespoon minced chives
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 2 tablespoons butter
- 1/2 cup crumbled cooked bacon
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded Cheddar cheese
