Mexican Tortilla Casserole

Instructions Preheat the oven to 400 degrees F
- 1 tablespoon extra virgin olive oil
- 1 large yellow onion, chopped
- 1 medium garlic clove, minced
- 1 teaspoon ground cumin
- 1 1/2 teaspoons chili powder
- 1 can (14 ounces) fire roasted diced tomatoes, drained, 1/3 cup juice reserved
- 1/4 cup tomato paste
- 2 cans (15.5 ounces) black or pinto beans (or a mix), drained
- 1 1/2 cups frozen corn
- 3 cups coarsely chopped spinach
- Salt and ground black pepper
- 8 corn tortillas
- 2 cups (8 ounces) Monterey Jack or cheddar cheese (I used both)
- Optional toppings: chopped fresh cilantro, chopped fresh jalapeño, sour cream, salsa

- 1 cup raspberries (fresh or frozen will both work fine!)
- 1 cup sugar
- 1/4 cup water
- 9 shots tequila (I’ve been using Familia Camarena all week, and YUM)
- 11 shots lime juice
- Fresh lime wedges, for garnish
- salt or sugar, to put on glass rims (1/4 cup should be more than enough)
Cider Bourbon Jam Cocktails

Add the apple cider, bourbon and jam to a cocktail shaker or mason jar with a few ice cubes
- 3 oz apple cider
- 1 1/2 oz bourbon
- 1 tsp your favorite jam
- 2 oz ginger beer
- freshly grated nutmeg
- dried apples, sliced apples and/or oranges for serving
Habernero Beer Mustard

Instructions Add both types of mustard seeds to a mixing bowl
- 1/2 cup brown mustard seeds
- 2/3 cup yellow mustard seeds
- Scant 1 cup apple cider vinegar
- 1 cup beer
- 3 habanero peppers, ribs and seeds removed, chopped
- 2-3 Tbsp honey
- Salt to taste

Directions Preheat oven to 400
- 3 1/2 cup all-purpose flour
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp sugar
- 8 tbs unsalted cold butter, cut into cubes
- 1/2 cup sour cream
- 2/3 cup pale ale or wheat beer
- 1/2 cup shredded cheddar cheese
- 3 tbs chopped green onions
- 2 tbs melted butter
- 1/4 tsp course sea salt
Belly Stuffing Peanut Butter

- 2 tsps cinnamon

To make the sauce, bring the mirin, vinegar, soy sauce, honey, ginger, and wasabi to boil in a small saucepan
- 3 tablespoons sweet cooking rice wine (mirin)
- 1 tablespoon seasoned rice vinegar
- 1 tablespoon reduced sodium soy sauce
- 1 tablespoon honey
- 1 teaspoon fresh ginger, peeled and minced
- 2 teaspoons wasabi paste
- 1 lb salmon fillet, cut into 4 equal pieces
- 1 ⁄2 teaspoon salt
- 1 ⁄2 teaspoon pepper
- 1 ⁄4 cup scallion, thinly sliced
