- 1 1/2 oz dark (brown) rum
- 1/4 oz Jamaican dark rum
- 1/4 oz light (white) rum
- 1 oz Pineapple juice (unsweetened)
- Juice of 1 small orange
- Juice of 1 limes
- 2 tsp simple syrup
- 1/4 tsp 151 proof rum
- 1 tsp powdered sugar

- 2 can(s) (15 1/2 ounces each) chickpeas
- 1/3 cup(s) fresh lemon juice
- 1/4 cup(s) tahini
- 2 clove(s) garlic, chopped
- 1/8 teaspoon(s) cayenne pepper
- 1.25 teaspoon(s) coarse salt
Creamy Sundried Tomato Parmesan Chicken

Instructions In a shallow bowl, combine the flour and parmesan cheese
- 2 large boneless and skinless chicken breasts, halved horizontally to make 4 fillets
- 2 tablespoons Tapioca flour (or all purpose or plain flour/s)
- 2 tablespoons finely grated fresh Parmesan cheese (do not include for dairy free option)
- 1 teaspoon salt
- Cracked pepper
- 2 tablespoons reserved sun dried tomato oil (or olive oil)
- 2 tablespoons minced garlic
- 200 g | 7oz jarred sun dried tomato strips in oil, drained (reserve 2 tablespoons of oil for cooking)
- 1 cup sliced mushrooms (250 g | 8 oz)
- 1 1/2 cups milk (reduced fat, skim or full fat milk) *SEE NOTES FOR DAIRY FREE OPTIONS
- 1 tablespoon cornstarch (cornflour) mixed with 2 tablespoons of water**
- 1/3 cup fresh grated Parmesan cheese (do not include for dairy free option)
- 2 tablespoons fresh shredded basil, to serve
Buffalo Ranch Deviled Eggs

Directions 1. Peel the hardboiled eggs and cut them in half, lengthwise

- 8 oz. cream cheese
- 1/2 cup cayenne pepper sauce (like Frank's Red Hot)

- 4 ounces water
- 2 1/4 ounces light rum

- 2 ounces light agave nectar

Mortadella Toasts

In a food processor, add the mortadella and grind until a coarse paste forms
- 1/2 lb Mortadella in one piece, rind removed
- 1/2 cup Fresh ricotta
- 1/4 tsp Freshly ground black pepper, plus more to finish
- Assorted sliced breads, toasted and cut into triangles, or thin baguette slices, toasted
- 1/2 cup Pistachios, toasted and coarsely chopped
