Self-Rising Biscuits

(Important note: You may substitute 2 1/2 cups buttermilk for the milk/vinegar mixture
- 2-1/3 cups Whole Milk
- 3 Tablespoons White Distilled Vinegar
- 6 cups Self-rising Flour, Plus More For Kneading
- 1-1/2 teaspoon Salt
- 3/4 cups Lard (OR Butter OR Shortening OR A Combination)
- Melted Salted Butter, For Brushing
Crock Pot Chicken Casablanca (Ww Flex and Almost Core)

Sauté onions, ginger and garlic in oil for 3 or 4 minutes and transfer to crockpot
- 1 1⁄2 tablespoons olive oil
- 2 large onions, thinly sliced
- 2 teaspoons fresh ginger, grated
- 3 garlic cloves, minced
- 2 1⁄4 lbs boneless skinless chicken breasts
- 4 large carrots, sliced about 1/4 inch thick (or less)
- 2 large sweet potatoes, peeled and diced or 2 large potatoes, peeled and diced in 1 to 1 1/2 inch chunks
- 4 tablespoons currants (if Core must count points) or 4 tablespoons raisins (if Core must count points)
- 1 teaspoon cumin
- 1 ⁄2 teaspoon turmeric
- 1 ⁄4 teaspoon pepper
- 3 ⁄4-1 teaspoon cinnamon
- 1 ⁄4 teaspoon cayenne pepper
- 2 (14 1/2 ounce) cans diced tomatoes
- 3 medium zucchini, sliced 1 inch thick
- 1 (14 1/2 ounce) can garbanzo beans, drained and rinsed
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh cilantro, chopped
Orange Rosemary Biscuits

In a large bowl, stir together flour, baking powder, salt, rosemary and orange zest
- 2 cups all-purpose flour
- 4 tsp baking powder
- 1 tsp salt
- 1 tsp chopped fresh rosemary
- zest of 1 orange
- 1/2 cup cutter
- 1/3 to 1/2 cup Florida's Natural Brand Premium Orange Juice
- Optional Ingredients: 9 slices prosciutto or ham (1 oz each) 9 slices Goat cheese (1 oz each) 9 sprigs fresh rosemary & 3 tbsp olive oil
Mexican Pasta Salad

A delicious Mexican Pasta Salad covered in a creamy salsa dressing
- Dressing:
- 1 (16 oz.) pkg. salad macaroni
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (15.25 oz.) can corn, drained
- 3 Roma tomatoes, diced
- 3 whole green onions, finely chopped
- 1/4 - 1/3 c. finely chopped onion
- 1/4 c. chopped cilantro
- up to 1/2 c. crumbled Feta cheese, opt.
- 1 c. jarred salsa
- 1 c. sour cream
- 1/4 c. Mayonnaise
- 1 clove garlic, minced or pressed
- 1/2 tsp. cumin
- salt and pepper
- 1 lime juiced
Eggs Benedict

Directions Fill a large, wide pot halfway with water and bring to a boil
- Hollandaise Sauce:
- 1/4 cup white wine vinegar
- 8 eggs
- Extra-virgin olive oil
- 8 thick slices Canadian bacon
- 4 English muffins, fork split
- Hollandaise Sauce, recipe follows
- 4 cups mesclun mix
- Juice of 1/2 to 1 lemon
- Kosher salt

- Ice cubes, as needed

Grilled Cedar Plank Salmon: 2014 Clean Eating Challenge, Post 2 of 4

Instructions -3 hours prior to grilling, prepare your cedar plank by soaking it in water
- 3-4 , (4-6 oz.) salmon fillets, or one large half salmon (look for wild caught if available) fresh or frozen
- 1 lemon
- 2-3 cloves of garlic, minced
- 1 Tbsp. fresh dill, minced
- Salt and Pepper to taste
Shrimp Scampi Dip

Preheat oven to 350 degrees F
- 2 tablespoons unsalted butter
- 8 ounces medium shrimp, peeled, deveined and roughly chopped
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes, or more, to taste
- 1/4 cup white wine*
- 2 tablespoons freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper, to taste.
- 4 ounces cream cheese, at room temperature
- 1/4 cup sour cream
- 3 tablespoons mayonnaise
- 2 tablespoons chopped fresh parsley leaves
- 1/2 cup shredded mozzarella cheese, divided
- 2 tablespoons grated Parmesan

- Dash of paprika
- Several pinches of cayenne
