Creamy Bow Tie Pasta

Cook pasta according to package directions
- 1 cup uncooked bow tie pasta
- 1-1/2 teaspoons butter
- 2-1/4 teaspoons olive oil
- 1-1/2 teaspoons all-purpose flour
- 1/2 teaspoon minced garlic
- Dash salt
- Dash dried basil
- Dash crushed red pepper flakes
- 3 tablespoons 2% milk
- 2 tablespoons chicken broth
- 1 tablespoon water
- 2 tablespoons shredded Parmesan cheese
- 1 tablespoon sour cream

1 Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups
- 1 box chocolate fudge cake mix
- 1 1/4 cups water
- 1/2 cup vegetable oil
- 3 eggs
- 2 containers (15 oz each) whole-milk ricotta cheese
- 3/4 cup sugar
- 1 teaspoon vanilla
- 4 eggs
- 1 box (6-serving size) chocolate instant pudding and pie filling mix
- 1 cup milk
- 1 1/2 cups whipped cream or frozen (thawed) whipped topping
Halloween Cookie Bars

Combine the first six ingredients in large mixing bowl
- 1/2 cup old fashioned or quick oats
- 1 cup brown sugar, packed
- 2 cups biscuit baking mix-Jiffy, Bisquick, Pioneer or Homemade
- 1 egg, beaten
- 1 stick margarine, melted
- 1 teaspoon vanilla extract
- 1 cup butterscotch chips
- 1 cup candy corns

Red, White and Blue Grilled BBQ Potato Salad

Preheat an indoor or outdoor grill
- 2 pounds baby Yukon gold, red bliss and Peruvian blue potatoes
- 1 bunch green onions
- 2 tablespoons EVOO Extra Virgin Olive Oil, plus more for drizzling
- Salt and freshly ground black pepper
- 1 heaping tablespoon dark brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- Couple of dashes of hot sauce, depending on how hot you like it!
- 3 tablespoons white wine or apple cider vinegar
Eclair Icebox Cake

In a large bowl whisk the pudding with the milk
- 2 small boxes of french vanilla pudding
- 3 cups cold milk (I used skim)
- 1 (8oz) tub cool whip
- 1 box (3 sleeves) graham crackers
- 6 Tbsp butter, room temperature
- 4 Tbsp milk
- 1 tsp vanilla
- 6 Tbsp unsweetened cocoa
- 1 1/2 cups powdered sugar

Preheat oven to 425°F. Coat a baking sheet with cooking spray
- 3 spray(s) cooking spray
- 1/2 cup(s) fat free egg substitute
- 1/2 cup(s) dried plain breadcrumbs, plain or whole wheat, panko or regular
- 1/4 cup(s) uncooked white cornmeal
- 1/4 tsp garlic salt
- 1/4 tsp table salt
- 1/4 tsp paprika
- 1/4 tsp black pepper
- 1 pound(s) uncooked boneless skinless chicken breast(s), cut into 1-inch cubes

Easy Baked Alaska

To make the meringue, place the egg whites in a stainless steel or glass bowl
- 5 large egg whites
- 1/2 teaspoon cream of tartar
- 1 teaspoon vanilla
- 3/4 cup granulated sugar
- several drops food coloring (optional)
- 1 4 x 6-inch layer of cake about 1 1/2 inches thick
- 1 brick of ice cream approx. 3" x 5" x 4"
MVP Chili

1 Decase the sausage and sauté in a large pot; use a wooden spoon to crumble the sausage as it cooks
- 2 packages (19 ounces) Hot Italian Sausage Links, removed from casing* (use mild links for a less spicy chili) *Cut sausage link end to end, about three-quarters of the way through. Flip sausage link over, grasp casing and pull off.
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 tablespoons chili powder (use mild chili powder for less spicy chili)
- 1/4 teaspoon cumin
- 1 can (15.5 ounce) black beans
- 1 can (15.5 ounce) red kidney beans
- 1-1/2 cups corn (frozen or fresh off the cob)
- 1 can (28 ounce) crushed tomatoes
- 2 tablespoons tomato paste
- 1 bottle (12 ounce) dark beer (OK to substitute w/light beer or 1 cup beef stock)
- salt and pepper
